Procedure: 1. Add ingredients of Phase I to main container with propeller mixing and heat to 70*C (heat with water bath to avoid caramelization of sucrose). 2. In a side container mix ingredients of Phase II while heating to 70*C. 3. Once target temperature is reached, add Phase II to main slowly with high speed mixing (in parts - similar to a W/O emulsion). 4. Force cool. 5. At 50*C or below, add Phase III. 6. Adjust clarity with water (approximately 0.5-1.5%).
