Skillet Stir Fry

1. Scrub 2 potatoes, cut out spots, cube. a. Cover with plastic wrap to hold in steam. 2. Microwave (5-6 minutes) on pie plate (Pyrex) or Corelle plate until tender. a. Let sit. Check for tenderness with hot pad on potatoes. They should be soft or fork tender. 3. Prepare all Vegetables: a. Slice onion wedge. b. Peel and slice 2 carrots. c. Chop green peppers d. Chop Zucchini Squash 4. Add 1 Tbsp oil to Dutch oven. 5. Heat for about 2 minutes 6. Drop in small piece of hamburger. (If pan is hot enough, meat will sizzle) 7. Add rest of lb of hamburger; break apart and brown until cooked. 8. Add onion and carrots. 9. When cooked, add green pepper and zucchini slices, keep stirring. 10. Add potatoes. 11. Season to taste with salt and pepper. Serve.
