Sprouted Green Mung

Vigna radiata (Letlhodi) Botanically Green Mung originates in Asia and has quickly spread all over the world including Botswana, It has an established history as part of the Tswana diet and is easy to cultivate. Though commonly prepared as a soup this versatile legume can be used as a base of many food items such as flour, noodles, snacks etc.

Sprouting! What is it all about, Sprouting is the technique of allowing seeds of edible plants mainly vegetable, legumes and grains to germinate and grow to about 3-7cm and can be eaten raw as part of salads, or cooked as part of other vegetarian dishes. ALMOST ANY SEED CAN BE SPROUTED!

Sprouts are one of the highest sources of fiber. Sprouts contain the highest and purest forms of vitamins, proteins, trace minerals and nutrients necessary for a long healthy life (Antioxidants and Phytochemicals). Green mung is one of the easiest seeds to sprout. This then makes their addition to a meal one of the easiest ways of getting a completely balance meal. How to Spout! 1. Purchase high-quality, seed. Rinse in lukewarm water not hot. 2. Place two tablespoons of seeds in a 1liter size Jam or Mayonnaise jar with about a cup of water. Soak overnight. Green Mung seeds need not be pre-soaked. 3. After soaking, drain water from jar through cheesecloth which is fastened over opening with a rubber band. Rinse and drain again. 4. Shake jar to spread seeds around, and set at an angle in a warm dark place. 5. Rinse and drain seeds twice a day. When tails have grown about an 2cm long set jar in a sunny window and allow to green. 6. When green they will need to be refrigerated and eaten promptly. RECIPE

Sprouted Mung Salad


1 Cup Sprouted Mung 1 Tbs. Olive oil (Optional) 4 Avocados 1 tsp. Onion powder 1 tsp. Garlic powder 1 tsp. Sea Salt 1 Tbs. Lemon juice 1 Cup Tomatoes Diced Cup Mixed Bell Peppers (Yellow, Red, Green) Mash avocado well with a fork and set aside. Blend bell and with lemon juice. Mix avocado with peppers and remaining ingredients. Serve fresh. Raw chili pepper (Optional) Salad
