New Year 2013 Dinner Menu and Beer Pairing

Start:
-Three styles of locally cured artisanal ham Copa, Toscana salami, and Soprassata, served with locally made baguettes, paired with fine cheeses selection.
~Louisville Sour~ Primary fermentation in American Oak medium bodied golden ale refreshingly tart flavors of lemon zest and wood.

Salad:
-Arugula salad with candied walnuts, beats, red grapes and pomegranate Purple Haze vinaigrette.
~2012 Wassail~ This year's version of our winter ale starts with a dark Scottish style base beer. Malty richness is balanced with the tart, drying flavors of green apples and local high-bush cranberries, both of which were added to the fermenter along with oak chips soaked in rum

Choice of:
-Marinated tenderloin Kabob grilled with pineapple, shrimp and pears, served over parsnip puree and a mountain berry demi-glace -Seared pork tenderloin sauted root veggies with splash of Single Engine Red and roasted potatoes -Portabella ratatouille roasted garlic in layered flakey crust drizzled in pesto crme ~2012 Hibernale~ Spicy blend of Belgian yeasts and dark crystal, Munich and honey malts.

Choice of:
-Champaign sorbet topped with pistachio mascarpone and dark chocolate shavings -Chocolate cake stuffed with strawberry mouse and topped with gran marnier crme anglaise ~2012 Mad Dog Barley Wine~ Brewed at the end of 2011 this year's version of our strongest beer is a straightforward Englishstyle barleywine. Golding and Cascade hops provides deep ruby hues. Considerable alcoholic strength is shrouded in rich, strong aromas of toffee, caramel and brown sugar while the palate is rewarded with heightened flavors of malt, toast, dried fruit and port. Here's to Mad Dog!
