Cc acid amin c vai tr quan trng i vi s sinh sn v pht trin ca nm
men. Ngoi lng acid amin c sn trong dch qu, qu trnh ln men vang cng
to thm mt s axit amin lm cho vang thnh phm c hng, v c trng.

Mi thm ca vang thnh phm l do cc cu t thm nh cc loi ru bc
cao, etylacetat, acetaldehyt, acetic.. to ra bi qu trnh ln men, tng tr trong

2.4. H vi sinh vt c trong vang
Trong mi trng dch qu trc ln men c cha nhiu vi sinh vt, chng
sng ch yu v qu, cnh, cung l v mi trng xung quanh. Thng qua
giai on p chng c xm nhp vo dch nho, phc h vi sinh vt ny gm 70
% nm mc, 15 20 % nm men (tham gia chnh trong qu trnh ln men ru),
cn li l vi khun. Nc nho c nng axit cao khng thun li cho vi sinh vt
pht trin, nm men c t l nh trong dch qu nhng c kh nng pht trin tt
trong iu kin thiu O2. Nn dch nho l mi trng tt cho nm men, cc vi
sinh vt khc b c ch do cn tng, pH gim dn trong qu trnh ln men.
2.4.1. Nm men trong sn xut ru vang
- Nm men t nhin, trn b mt qu, trn cnh, trn l..
Cc men di c nhiu trong t nhin nht l nhng ni sn xut ru. Trn
b mt qu, c bit l qu chn. Khi phn loi cc men tm thy nc qu ln
men t nhin, ngi ta thy c nhiu loi, nhng ph bin hn c l mt s loi
nh Saccharomyces ellipsoideus, Kloeckera apiculata. Mt vi men sinh mng
khc l Schizosaccharomyces pombe c kh nng phn gii axit malic thnh axit
lactic lm cho ru c v cht, ngoi ra cn c Hancelnula, Pichia.. to mng
trng trn mt ru.

Tng bn sinh hc
Do cc cht dinh dng c trong ru vang b vi khun s dng v
chuyn ho axit malic, xitric thnh cc sn phm khc lm cn kit
thc n ca cc vi khun khc.
Nhng cng c mt s mt khng li ca qu trnh ny nh bin i cm
quan, thay i mu sc v s to thnh cc amin to cho vang c mi l.
Qu trnh ln men malolactic thch hp to = 15 20oC.
pH(opt) = 3,2 3,8

2.5.4. Qu trnh lng trong v tr ru vang
Thng cc vng trng nho, ngi ta c th ung nc nho v vang mi
thi im: ung nc nho khi ch bin qu vi ngt nguyn s, ung vang
mt vi ngy sau khi ln men chnh khi ng lc ny CO2 ang si tm mnh,
ung vang sau khi kt thc ln men chnh. Tuy nhin, nu ng chai th vang
phi p ng nhng i hi cao hn, t nht v mt ngoi hnh nh vang phi
trong vt, khng b lng cn.. p ng c nhng yu cu trn c th p dng
nhiu bin php.

Qu trnh tr ru vang
Thc cht qu trnh tr vang l qu trnh ln men vi tc chm v
cng chm nhm thu phn nt lng ng cn st li. Qu trnh
ny song song vi s ln men malolactic gim chua sinh l v
tng hng v cho vang, sau l qu trnh kt lng pectin, protein..
Qu trnh ny quyt nh ln n cht lng ca sn phm sau ny v n
ph thuc vo nhiu yu t nh thi gian, nhit , hm lng oxy, dch
qu c ln men, v ng dng nhng tin b khoa hc k thut trong
ln men ru vang..Nu nhit tr cao th lm cho tc phn ng
nhanh km theo l cc phn ng to amin, ete gy mi l cho vang
ng thi lm cho qu trnh kt lng gim dn n kh gn v lc trong
vang.
Nhit thch hp cho vic tng tr ru vang giai on u l 10
15o C qu trnh ln men malolactic din ra thun li, sau vang
c a xung cc hm ru tng tr.
2.5.5. Qu trnh lm trong v n nh ru vang
Ru vang l mt dung dch sinh hc kh phc tp trong cha nc, ru
etylic, axit hu c, cc mui ca chng, ng, protit, cht mu, cht cht, hp
cht pectin v nhiu thnh phn khc na.
Ru vang sau khi ln men rt c do cc cn nh ( t bo nm men, xc vi
khun, ht kt ta, tinh th mui tactrat, mu v qu, tht qu..). Cc pha rn phn
tn ny dn lng xung y thng, nu lng t nhin th ru rt trong nhng
thi gian rt lu thm ch ln n hng chc nm.
Cc dng c v lng cn
- c sinh hc: gy ra bi s pht trin ca nm men, xc vi khun cn st li.
Nu b c do vi khun th rt kh lm trong bi v n l dng c phn t, tuy
nhin c th p dng mt s bin php hn ch dng c ny nh sc kh SO 2,
iu chnh acid, iu chnh qu trnh ym kh.

phn bi con men, mt phn na l b cc cht tanin lm kt bng, nhng vn
cn trong ru tr. Nu nhit tng cao, lng oxy qu tha, v nu lng
tanin tng ln (ng trong thng g si ) gy ra kt bng protein di dng
nhng vn c mu trng, x l tt nht l un ru nng n 70 80 oC, ri
ngui, sau lc qua bentonit.

Trong sn xut ru vang khng cn s dng nhiu nc v y ta chn
nguyn liu sn xut chnh l nho ti.
Nc dng cho nh my c th dng chung vi ngun nc cp cho khu cng
nghip hoc dng nc ging khoan ca nh my.
3. S dng ch phm enzym
Mt s enzym thng c s dng phn gii pectin trong dch qu:
Pectinetyl esteraza (Pectinhydrolaza): l cc enzym xc tc s thu phn
lin kt este trong phn t pectin hoc axit pectinic, s thu phn ch xy
ra lin kt este lin k vi nhm cacboxyl t do, cho nn s lin kt
este trong phn t pectin v axit pectinic c th b thu phn hon ton
hoc mt phn.

Saccharomyces cerevisiae: nm men ny c t bo hnh trng, ovan,

trng hp c th to n 18 20 % cn theo th tch.
Saccharomyces oviformis: chng nm men ny thng c tch t
nc qu nho cho ln men t nhin. Chng c kh nng chu ng cao,
chu nng cn cao, ln men kit ng cho cn cao c khi ti 18
% theo th tch. Chng ny hay c dng ln men dch qu c hm
lng ng cao ch ru vang kh cho cht lng tt.
Mt s chng vi khun lactic thng dng trong qu trnh ln men ph:
nc ta cng nh trn th gii thng dng chng Leuconostoc oenos,
n c kh nng chuyn ho axit malic ( v chua gt ) thnh axit lactic ( v hi
ho ) v chuyn ho ng glucoza thnh etanol, axit lactic, CO2 v axetat.

Axit malic l cht cm ng cho qu trnh ln men malolactic.
pH ca mi trng thch hp cho qu trnh chuyn ho axit malic thnh
axit lactic l 3,2 3,8.

Axit lactic vi hm lng 5 g/l s c ch vi khun ln men malolactic.
6. Cc nguyn liu khc
Axit tartaric, CaCO3.. c dng iu chnh pH = 3,5 4 to pH ti u
khi chun b dch cho qu trnh ln men.
Cc ho cht v sinh ty ra thit b, chai, thng cha, ng ng.. thng
dng NaOH, HCl, cloramyl.. v chng c cha trong cc CIP.
Cc cht tr lc
Gelatin: c s dng khi vang c nhiu tanin, gelatin l cht cha
protein ho tan tt trong vang v tch in dng. Trong vang c nhiu
tanin tch in m, k c cc cht ging vi cht mn mu en ca vang
b bin mu nu. Cc cht c in tch tri du s ht nhau, ko theo
c cc cht cn khc nh nm men, vi khun, protein, tht qu cn st v

KT LUN
Trong thi gian c giao n tt nghip Thit k nh my sn xut
ru vang cng sut 2 triu lt/nm . mi ch l nng sut ban u khi nh
my i vo sn xut, vi s pht trin rt mnh m v kinh t ca Vit Nam v
nhu cu thng thc t ung ru cn, bia sang ung ru vang th th trng
tiu th ru vang ca nc ta cn ln hn rt nhiu. Nh my c xy dng ti
