Mushroom-cheese melt Ingredients: Crimini mushrooms: 8 oz sliced Spring onion : 10 chopped into 5mm pieces (I use both the

onion and the leafy part) Bell pepper : 1 chopped into small bits Garlic : 3-4 cloves very finely chopped Parsley or cilantro: for seasoning (8-10 springs) Thai green chillies: 1-2 (optional) Butter : 1 tbsp Salt and ground black pepper: To taste Cheese : Pepperjack/swiss Bread : 6 slices, toasted Preheat oven to 350F Directions 1. Heat butter in a pan. 2. Saute thai chillies, garlic and onion in that order (don't let the garlic burn). 3. Once the onions are almost cooked, add the chopped bell peppers. 4. Saute for 3-4 minutes (you want the peppers to be crunchy). 5. Add the chopped mushrooms and cook for 3-4 minutes. 6. Add salt and pepper to taste and cook for some more time. You can opt to cook till the water from the mushrooms dries up. 7. Add chopped parsley or cilantro for seasoning. 7. Now add this mix on toasted slice of your favourite bread (I enjoy plain white or a multi-seed bread). 8. Add a slice of cheese on top and put it in the preheated oven. 9. Take the slice out one the cheese has melted and just begins to flow.
