Tamale Pie

A great and easy dinner recipe, makes about 6 servings.

Filling:
1 lb. ground beef (or any other type of meat, pork, chicken, etc.) 1 cup chopped onion 1 bell pepper (chopped) 15 oz. can tomato sauce 20 oz. can chopped tomatoes 15 oz. can kernel corn, drained 15 oz. can black olives, drained 1+ tablespoon chopped garlic 1 teaspoon sugar teaspoon salt teaspoon black pepper 2 teaspoons chili powder 1 cup shredded cheese (Mexican blend, cheddar, or your favorite)

Crust:
cup cornmeal teaspoon salt 2 cups cold water teaspoon chili powder

Directions:
Preheat oven to 375 degrees In a large saucepan, brown ground beef until the pink color is gone, drain. Add onion and garlic until onions are slightly opaque, then add remaining filling ingredients, stirring over medium heat while crust is prepared. In medium pot, combine crust ingredients, stirring over medium heat until it thickens. Add 1 tabelspoon butter, stir and remove from heat.

In large black iron skillet or a large casserole dish (sprayed with Pam), spoon half of crust mixture into skillet and spread evenly. Add filling mixture, then spread the shredded cheese over the filling. Spoon remaining crust mixture onto top evenly. Bake at 375 degrees until golden brown on top and enjoy! I usually add a chopped jalapeo pepper and/or a can of Rotel to spice it up!
