Mango Grilled Chicken Salad

INGREDIENTS 1 jar (20 oz.) Del Monte SunFresh Mango, drained and sliced 3 cups diced grilled chicken 1 cup diced celery 1 cup sliced red pepper 1 cup sliced green pepper 1/4 cup chopped green onions 1/2 cup light mayonnaise 1/2 cup low-fat plain yogurt 1 Tbsp. honey 1 tsp. grated lime peel 2 Tbsp. fresh lime juice 1/4 to 1/2 tsp. cayenne pepper, to taste baby spinach leaves 1/2 cup cashews (Optional) additional green onion (Optional) lime wedges COOKING DIRECTIONS

1. Combine chicken, celery, peppers and onions in bowl. 2. Blend together mayonnaise, yogurt, honey, lime peel, lime juice and cayenne in small bowl. 3. Toss dressing with chicken mixture; chill, if desired. 4. Arrange chicken salad over a bed of baby spinach. Arrange fruit around chicken mixture. Sprinkle with cashews. Garnish with additional green onions and lime wedges, if desired.
