Love Letter Cookies


Ingredients
125g butter, room temperature 3/4 cup (165g) firmly packed brown sugar 1 egg 1 1/2 cups (225g) plain flour 1/4 cup (35g) self raising flour 4 tbsp cocoa powder

Method
1. Beat butter and sugar in a medium bowl until light and fluffy. Beat in egg. 2. Stir in flour and cocoa in two batches; knead dough on a lightly floured surface until smooth. 3. Roll dough between two sheets of baking paper until 3mm thick. Refrigerate for 30 minutes. 4. Preheat oven to 180C (160C fan-forced). Grease or line a baking tray. 5. Cut dough into 5x10cm rectangles and transfer to baking tray. Bake for 10-13 minutes, until edges just begin to colour. Remove from oven and leave cookies to cool on trays for 10 minutes, then transfer to a wire rack to cool completely. 6. Decorate with preferred icing.
