PEAR AND MULBERRY UPSIDE DOWN CAKE Ingredients Pears, cored and thickly sliced 2

Refined flour (maida)

Grease an eight-inch microwave cake dish. Spoon honey on the base of the dish. Grate the lemon skin over the honey. Arrange the pear slices all round the edge of the dish. Place the mulberries in the centre. Sieve refined flour and baking power into a bowl. Melt the butter and add along with brown sugar and mix. Break the eggs and add and beat everything well using a hand blender. Add milk and beat. Spoon the batter over the fruits in the dish. Cook on microwave HIGH for ten to twelve minutes. Let it stand for two to three minutes. Loosen the edges and turn it upside down on a serving dish. Spoon custard all around and serve.
