Methi Herbs & Egg Curry

Delicious treat for the acquired tastebud. Ingredients 1 dozen Methi Herbs Clean and rinsed well. 2 medium Tomatoes (Chopped) Onion Finely Chopped Teaspoon crushed Ginger & Garlic. Teaspoon Tumeric Powder 2 Green Chillis 2 Tablespoon Oil 5 Medium Eggs Beaten. Teaspoon Mustard Seeds Teaspoon Jeera Seeds.

Method Heat oil in pot, add mustard and jeera seeds, green chillis, onion and tumeric powder and allow to saut until onion lightly browned. Add tomatoes and allow to simmer for 2 to 3 minutes. Add herbs and salt and allow to cook for approximately 7 minutes. Pour over beaten eggs and allow to cook for 5 minutes. Fold over egg and herb mixture until all the eggs have been cooked (+/- 3 minutes)
