The two ingredients that the workers dump into the tank at the beginning of the process are starch and sugar. Afterwards the syrup is added with color, flavor and acid. The capacity of the mixer is approximately four gallons. The batch usually has to mix for ten seconds. The mixture is sent by a pump to the reservoir tank. Another pump sends the reservoir tank to the pre-cooker. The capacity of the pre-cooker is approximately fifty gallons. The source of the heat for the pre-cooker is a boiler. The precooker heats the mixture to tree hundred degrees Fahrenheit. The purpose of the pre-cooker is to break the molecular bonds to convert the mixture into sugar. When the mixture leaves the pre-cooker, it is sent to the transfer tank. The capacity of the transfer tank is about five gallons. The pre-cooker recirculates the mixture into a heat exchanger.
