Mise en Place: Preheat oven to 350F Boil potatoes, strain and cut into cubes. Chop onions into brunoise In a bowl, combine eggs, milk, and cream. Procedure: Saute potatoes with the onions. Set aside. Combine potato mixture with the egg liasion. Season with salt and pepper. Put in the oven for 10 minutes or until the egg has cooked and no traces of moisture will be seen when pricked with a toothpick or fork.
