Warm Potato, Bacon & Cheese Salad

Approximately 800g small potatoes or large ones cut into quarters 5 T Olive oil or Vegetable oil Salt & freshly Ground Pepper 200g Bacon rashers, rind removed and roughly chopped 250g Cos lettuce leaves, roughly torn 4 medium, firm tomatoes- cut into wedges 150g block cheese, cubed 1 T white wine vinegar 1 teaspoon mustard

1. Preheat oven to 180C. Scrub potatoes and place in a baking dish with 2 T of the oil. Season with salt and pepper. Bake for 35 mins, or until tender when pierced with a fork. Leave to cool for about 10 mins. 2. Meanwhile, heat a frying pan over a high heat. Add the bacon and cook, stirring, until crisp. 3. Combine the lettuce, tomato and cheese in a serving dish. Add the potatoes and bacon. 4. Combine the white wine vinegar, mustard and remaining oil, and season with salt & pepper. Drizzle over the salad and toss gently. 5. Serve whilst still warm.
