Almond Cake (double for a layer cake) 1-1/4 cup flour 3/4 cup sugar 1-1/2 tsp.

baking powder 1/2 tsp. salt 3/4 cup milk 1/4 cup butter 1 egg, lightly beaten 1/2 tsp. vanilla extract 1/2 tsp. almond extract Beat together all ingredients at low speed with electric mixer. Beat for a further 3 minutes at high speed. Line a 9" square baking pan with waxed paper and pour in batter. Bake at 350 F for 35-40 minutes. At 8 servings, 1 serving equals: 224 calories 3 g protein 35 g carbohydrates 8 g fat 35 mg cholesterol Almond Frosting: 1/2 cup butter, softened 4 1/2 cups icing sugar 3/4 tsp. vanilla extract 1/2 tsp. almond extract 6-7 tbsp. milk Cream butter in mixing bowl until fluffy. Beat in icing sugar 1-2 cups at a time with mixer. Add extracts. Add milk a little at a time until the desired onsistency is reached.
