Coconut barfi

Ingredients: 250g dessicated coconut 125g sugar litre milk 2 tbsp condensed milk 2 tbsp ghee or margarine tsp powdered cardamom

Methods: In a heavy-based pan dry roast the coconut over a low heat until it turns light brown. Add sugar and stir constantly so that mixture does not stick to the bottom of the pan.

When sugar is well dissolved, add milk and condensed milk. Mix well and cook for 2 or 3 minutes more. Pour mixture in a greased dish. When cold, cut into squares or diamond shapes.
