SHRIMP FILLING
1 cup chopped shrimp (not cooked) 2 tablespoon chopped onion 2 tablespoon chopped cilantro 2 tablespoon unsweet ground coconut 2-teaspoon limejuice 1 teaspoon chopped ginger 1 teaspoon chipped garlic 2 fresh green chilly chopped 1-teaspoon garam masala or allspices 1-teaspoon ground cumin Salt to taste
PROCEDURE
1. Prepare the shrimp filling by combining all the ingredients in a bowl, mixing well and set aside. 2. Combine flour, salt, oil and water in a bowl. Knead for 5 minutes to make pliable dough. Divide dough into 8 balls, and then roll out each dough into 8 cm in diameter. 3. Fill each dough with one eighth of the filling and enclose the filling by the dough. 4. Flatten gently into around 5 to 6 cm into diameter. 5. Heat one more tablespoon oil in a frying pan and sear the shrimp cakes till light golden brown turning both sides. 6. Bake in the oven for around 12 to 15 minutes at 350 F. 7. Serve with green chutney.
