CHICKEN AND POTATO STUFFED PARATHAS

YIELD 4 TO 5
INGREDIENTS FOR DOUGH 4-cup paratha flour 1 teaspoon salt Water to make medium soft dough Flour to dust parathas while rolling TO MAKE DOUGH Mix flour and salt and water gradually to make medium soft dough. Keep it aside. INGREDIENTS FOR FILLING 1-pound ground chicken 2 medium boiled potatoes 2-tablespoon fine chopped ginger 2 fresh green chilies chopped 3-tablespoon fresh cilantro chopped 1-teaspoon ground chili 1-teaspoon garam masala 1-tablespoon oil Salt to taste Oil or butter to shallow fry parathas

PROCEDURE TO MAKE FILLING


1. Boil, peel and mash the potatoes. 2. Heat oil in a pan and add chop ginger, green chili and chicken, cook till chicken is cooked and add all the other spices. Let it cool down 3. Mix chicken and potato in a bowl and taste for salt. Divide into 8 to 10 portions

PROCEDURE TO COOK
Divide the dough into 8 to 10 portions and make balls. Roll the each dough into 5-inch diameter and place the filling into center and bring all the sides of dough together and seal the edges. Then flatten again with rolling pin into app. 8-inch diameter. Place the paratha on medium hot frying pan and when half-baked, turn over other side and apply butter or oil all over the parathas and shallow fry both the sides till light golden brown and serve hot.
