Chinese Beef and Asparagus Stir-fry

Ingredients:
500g lean beef 1 tbsp light soya sauce tsp sesame oil 1 tbsp Chinese rice wine 2 tbsp vegetable oil 200g fresh, thin asparagus cut 1/3 diagonally 3 cloves of garlic 2 tsp fresh ginger (cut into thin matchsticks) 3 tbsp chicken stock 2-3 tbsp oyster sauce

Instructions:
1. 2. 3. 4. 5. 6. Marinate beef in soy sauce, sesame oil & 2 tsp rice wine. Cover and leave to rest for 15 mins. Heat wok at high heat, add 1 tbsp vegetable oil and swirl. Ensure that oil does not smoke. Stir-fry the asparagus for 1-2 mins & remove. Add another tbsp. of oil, add beef in two batches & stir-fry for 1-2 mins. Remove and set aside. Add remaining oil, stir-fry the garlic and ginger for 1 min or until fragrant. Add stock, oyster sauce and remaining rice wine. Boil rapidly for 1-2 mins or until the sauce is slightly reduced. 7. Add in beef and asparagus. 8. Serve hot with rice.
