Ettie's Eats: Vegan Banana Nut Bread

Ingredients:
2 cups flour teaspoon baking soda teaspoon salt 1 teaspoon cinnamon teaspoon nutmeg teaspoon allspice cup Earth Balance vegan margarine, at room temperature 1/3 cup brown sugar, packed cup sugar 4 ripe bananas, mashed cup vanilla almond milk, mixed with 1 teaspoon apple cider vinegar 1 teaspoon vanilla cup pecans, chopped

Directions:
1. 2. 3. 4. 5. 6. 7. Preheat oven to 350F. Spray an 8-by-4 bread pan with non-stick cooking spray. In a large mixing bowl, mix together the flour, baking soda, salt, cinnamon, nutmeg and allspice. Set aside. Using an electric mixer, cream together the margarine, brown sugar and sugar. Once the butter and sugars are well mixed and creamy in texture, stir in the bananas, almond milk and vanilla. Add the wet ingredients to the dry mixture, and mix to combine. Pour the batter into the bread pan, and bake for one hour or until a knife inserted into the middle of the bread comes out clean. Yields 12 slices.
