Meals with sauces Components Bolognese sauce


Main ingredients
500g lean minced beef 2 rashers bacon (optional) 1 x 15ml spoon olive oil 1 red pepper 1 onion 1 carrot 6 mushrooms 1 clove garlic 400g can tomatoes 125 250ml stock 1 x 15ml tomato puree For a vegetarian version use 400g can brown lentils or aduki beans instead of meat 2 x 5ml spoons mixed herbs and/or basil and oregano

For the meatballs 500g lean minced beef 1 onion 1 clove garlic 1 egg 1 x 15ml spoon plain flour

1 x 15ml spoon oil 1 onion 1 clove garlic 2 x 15ml spoons canned sweetcorn 200g button mushrooms 200g broccoli 100g mangetout 2 x 15ml spoons frozen peas 200g canned red kidney beans 100g dried macaroni or pasta shapes eg shells

Fish Pie

1 quantity of Bolognese sauce (see left) 250g lasagne sheets For a vegetarian version use 400g can brown lentils or aduki beans instead of meat

1 quantity of Bolognese sauce (see left) 1 large aubergine, sliced into rounds, drizzles with oil and baked in oven until tender 1 courgette, sliced in rounds 3 potatoes (cooked and sliced into 2cm pieces) 4 x 15ml spoons olive oil

1 x 15ml spoon oil

4 salad onions 1 tomato 100g frozen peas

300g de-boned fish, egs plaice, cod, tuna, salmon 750g potatoes for topping 50 g cheddar cheese for topping (optional)

For the sauce
As above 600g milk 50g butter or margarine 50g plain flour 1 x 5ml spoon 100g cheddar cheese 1 x 15ml spoon grated parmesan cheese for topping 600g milk 50g butter or margarine 50g plain flour 1 x 5ml spoon 75g cheddar cheese 2 eggs 1 onion 1 clove garlic 1 carrot 1 celery 1 bay leaf 400g can tomatoes 1 x 5ml spoon cumin for a spicy sauce or 1 x 5ml spoon mixed herbs or handful fresh basil for a herby sauce Simmer all ingredients for 2030 mins until all veggies are soft. Then remove bay leaf and blend with hand blender until smooth. 600g milk 50g butter or margarine 50g plain flour 1 x 5ml spoon mustard paste 50g soft cheese 50g cheddar cheese 500g milk 50g butter or margarine 50g plain flour

To serve

Serve with 200g dried spaghetti

Serve with 200g dried spaghetti, 300g fresh egg noodles or 50g dried rice (boiled)
