Mauce Sauce

Serves a family

INGREDIENTS
4 mini Roma tomatoes 1 handful parsley blade lemongrass Pinch sage Pinch oregano Pinch thyme Pinch basil Pinch allspice Pinch nutmeg Pinch rosemary 3 drizzles mulberry vinegar 3 drizzles fine aged balsamic vinegar Avocado (enough to thicken the mixture) 2 drizzles Takatala sauce

METHOD
1. Place lemongrass, sage, oregano, thyme, basil, allspice, nutmeg and rosemary into a mortar and pestle and grind well. 2. Chop tomatoes, remove seeds and wash. 3. Wash parsley and chop finely. 4. Pour both vinegars into a bowl, and add tomato and parsley. 5. Pour in Takatala sauce. 6. Add some of the avocado. 7. Put the mixture into a blender or a Bamixable container 8. If not thick enough, add more avocado and mix. Continue to do so until thick enough, and use as a sauce and/or spread and/or Mause.
