Mix Vegetable Ingredients

olive oil as needed 1/2 cup of onion slices 7-8 green chilies, sliced in half along the length 1 teaspoon of ginger paste 1 teaspoon of garlic paste salt as needed 1 teaspoon of onion paste 1/2 teaspoon of turmeric powder 1/2 teaspoon of red chili powder 1/2 teaspoon of coriander powder 1 cup of cubed cauliflower 1 cup of cubed carrot 1 cup of cubed potatoes 1 cup of cubed capsicum 1/2 cup of cubed yardlong beans

Directions
1. Heat a saucepan with the olive oil. Fry the onion slices with the ginger, garlic and onion pastes, salt, turmeric, red chili and coriander powders. Add the cubed vegetables and green chilies. Pour in 1/2 cup of water and cook with lid on for 30 minutes. Check if the vegetables have softened. If not, then cook for another 5-10 minutes. Stir and garnish with fresh coriander leaves. Serve.
