To whom it may concern, I was pleased to see your recent posting for Internship opportunities and as a result I am writing to introduce myself as a candidate. I am seeking a 700 Hour internship beginning on October 8 and concluding on March 3. The requirement of 700 hours is strictly for credit requirement and would only be 35 hours a week through the duration of my 21-week availability. Though this is the requirement of my school, I am willing to work as many hours as you will have me for. I am interested in discussing with you how I can fit into your team. I am currently enrolled in courses at the New England Culinary Institute in Montpelier, VT. I am pursuing a BA in Culinary Arts and I plan to specialize in Sustainability. I have 2 years of professional experience in the kitchen, although I have been cooking since I could reach the counter. As you will see in my attached rsum, I am familiar with all aspects of food production, at both large and small scale. This familiarity allows me to operate efficiently while maintaining composure when stressful situations arise. My experience with food is supported by my drive for furthering my knowledge in the craft. I hope to join in, and learn all I can. I believe the only way to excel in the culinary world is through internship under like-minded, experienced Chefs. I hope to learn as much as I can but I also realize that learning opportunities are not present all of the time, and I am prepared to be held to the same standard, if not higher, as a employee. I should also mention that for several years my parents and I have grown an extensive organic garden. We have enjoyed using the items fresh, canned, frozen, and dried. I possess an understanding for the ingredients and the way they behave under the effect of cooking techniques. When surrounded by farms, gardens and chefs as a child, fresh food is what I crave. I bring this experience with me as an asset to both you and your restaurant. Thank you for your time, I look forward to hearing from you to arrange an interview soon.
