Lime-Rum Shrimp 1 1 3 1 1 1 2 lb. lime Tbs. Tbs. Tbs. Tbs.

fresh shrimp, peeled and deveined garlic cloves, peeled and minced olive oil butter dark brown sugar Kosher salt to taste dark rum

Heat a large pan over medium-high heat. Zest the lime. Drizzle the olive oil in the pan and add the shrimp and the garlic and the lime zest. Sprinkle with kosher salt. When the shrimp is cooked about halfway through, add the butter and sugar and juice the lime into the pan. Add the dark rum. Simmer until the shrimp is just done through. Do not overcook. Serve with coconut rice and tropical slaw.
