MOKUM

INGREDIENTS: 1 kilo fish grouper, snapper or pompano sliced 1/8 liter of oil 1/8 liter of vinegar 1 tablespoon achiote 1/2 tablespoon cumin 1/2 teaspoon oregano 8 peppers 6 cloves of roasted garlic 5 nails 4 banana peppers 3 tomatoes, sliced 2 onions, roasted 2 lemons (juice) 2 bell peppers 1 banana leaf oil salt

PROCEDURE: To cook mokum have to grind the garlic, an onion, cumin, oregano, achiote, cloves and peppers and mix with vinegar, oil, lemon juice and salt. Grease a pan with oil and line it with banana leaf, place half of the marinade, then fish slices and finally the remaining marinade. Add above tomato and remaining onion, sliced, the banana peppers and roasted red peppers, peeled and cut into wheels. Wrap with protruding banana leaf, cover the pan and put over low heat until the fish is cooked. the food is mos mokum Campeche famous like your taste, the taste is salty and sweet
