Banana, Date and Walnut Loaf Recipe using standard loaf tin 22cm base measurement INGREDIENTS 120g

wholemeal flour 120g self raising flour 60g dates chopped finely 60g walnuts chopped finely 1 tsp cinnamon 80gms brown sugar 40gms castor sugar 80g Grapeseed oil 1 egg 30g water 400g ripe banana (about 2 medium to large no need to mash !ust brea" in half and place on top of mi# in bowl$ 100g mil" of choice (soy dairy rice buttermil" etc$ ET!"D 1% 2% 3% 4% )% 6% ,% 8% -% 10% &reheat o'en to 180 (fan forced$ (rrange rac" into middle of the o'en Grease and line loaf tin &lace all the ingredients into a food processor *i# until well combined +hec" mi# and if there is a little still to mi# in sitting on top use spatula to bring that mi# to the middle and process again &our batter into loaf tin smooth top with spatula% Ba#e for $% mins chec" with s"ewer and ba"e for a further 10 minutes depending on o'en .et cool in tin for 10 minutes before placing on a cooling rac"% /elicious !ust sliced plain but great toasted too% 0eeps really well for a few days% Great for lunch bo#es%
