HEARTY CHICKEN NOODLE SOUP


(Sopa de pollo y pasta)

This recipe is an excellent source of vitamin A which keeps eyes and skin healthy. Ingredients
1 tablespoon vegetable oil 1 small onion, chopped 2 stalks celery, chopped 2 carrots, chopped 8-10 cups chicken broth or water 2 tablespoons chicken bouillon 2 cups cooked, diced chicken 1 12-ounce bag noodles 1-2 zucchinis, sliced

Directions
1. Heat oil in a large pot and saut onion, celery, and carrots until onions are clear. 2. Add broth or water, and bouillon. 3. Add chicken and simmer until very hot. 4. Add noodles and zucchini. 5. Cook until noodles are done and zucchini is crisp tender, about 15 minutes. 6. Refrigerate leftovers within 2-3 hours.

Tips
Try substituting canned or frozen veggies, like corn or peas. Serve this soup with whole wheat toast or crackers.
