Tuna Noodle Casserole


This recipe is a good source of iron, which carries oxygen in our blood.

Ingredients:
2 1/2 cups shell pasta, uncooked 1 teaspoon vegetable oil 1 medium onion, chopped 7 whole mushrooms, sliced 1 (10 3/4 ounce) can cream of mushroom soup 1 (7 ounce) can water packed tuna, drained 1/2 teaspoon ground celery seed 1/8 teaspoon each salt and pepper 1/2 teaspoon ground dill weed 1/4 teaspoon garlic powder 1/8 teaspoon cayenne pepper 1/4 cup low-fat milk 1/3 cup parmesan cheese, grated 1 cup frozen peas 2 tablespoons dry bread crumbs

Directions:
1. Preheat oven to 350 degrees. 2. Cook pasta, according to package directions, in boiling water. 3. In a large skillet, add oil over medium heat, add onions and cook until soft. 4. Add sliced mushrooms. Reduce heat to low, cover skillet and cook until mushrooms are tender. 5. Add remaining ingredients, except bread crumbs. Stir to combine. 6. Add cooked and drained pasta to mixture. Toss to mix. 7. Pour into casserole dish. Sprinkle with bread crumbs. 8. Bake uncovered at 350 degrees for 15 minutes or until bubbly. 9. Refrigerate leftovers with 2 hours.

7 servings, 1 cup each

Bright ideas:
Substitute grated cheddar cheese for the parmesan cheese.
