NFSC 470: Medical Nutrition Therapy Skill Area: Medical Nutrition Therapy Assignment Title: Case Study: Celiac Disease What I learned: In this assignment the purpose was to focus on a patient who had Celiac Disease. I researched the pathophysiology of Celiac Disease, interpreted lab values, calculated anthropometric data, made a diagnosis using nutrition therapy and analyzed results. Reflection to Assignment: This assignment made me realize that there is so much that goes into each illness or disease state. There are so many different factors that influence a disease state that everything needs to be considered before using nutrition therapy to help the patient. This assignment made me really appreciate all of the knowledge and information Ive received from my undergraduate studies. All of the information that Ive learned comes together to be used all at once. Relevance to the profession: Medical Nutrition Therapy is relevant to any Nutrition and Food Science Profession. Not only are they used in hospitals with clinical dietitians, but the skills learned from this assignment are used in other aspects of the Nutrition and Food Science field.
