Fried Noodles with Prawns (Phad Thai Koong Sod)

Ingredients
1cup (soaked and softened) rice noodles (120 g.) cup fresh prawns or chicken, pork or beef 1/3 cup chopped Chinese chi es or spring onions (scallions) 1 cup bean sprouts (or white cabbage finel! sliced) fresh large red"chili seeded and fine sliced (or red pepper) 2 shallots finel! sliced 1 tbsp. sweet pickled turnip (optional) thin sliced (use sweet one) block (about # cup) hard or fir$ tofu cut s$all cubes 1%1 c$. 1 tbsp. dried tin! shri$p 2 eggs 2 tbsp. roasted unsalted peanuts or cashew nuts crushed finel! tsp. dark so! sauce for $arinating the noodles tsp. ground black or white pepper powder 1 tbsp. so! bean oil or egetable oil cup chicken stock or egetable stock water Sauce 1 tsp. so! sauce 1 tsp. fish sauce 2 tsp. o!ster sauce 2 tbsp. ta$arind &uice 2 tsp. cane sugar (if !ou want to add the chicken powder can add 1 tsp. $ore) 1 tsp. deep"fried dried garlic or 1fresh garlic clo e chopped finel!

Preparation
1. 'eat the oil in a pan and deep fr! the tofu about 1 $inute on each side.
