Luscious Lemon Bar Fudge

Ingredients: 1/2 cup butter 1 (4.3 oz) package lemon pudding mix 1/2 cup milk 3 3/4 cup powdered sugar 1 tsp lemon extract 2 tsp lemon zest Begin by lining a 9x9 inch pan with parchment paper, set aside. In a medium sauce pan whisk together the milk with the pudding mix and butter and cook over medium low heat until thick. Remove from heat and add in powdered sugar, lemon extract and zest. Stir until completely combined. Pour into prepared pan and refrigerate until completely cooled and set. Lift parchment out of pan and dice fudge into 1 inch cubes.
