Deep Dish Farmers Harvest Pizza

A thick crust pizza cooked in a deep pie dish with lots of toppings Preparation time: 15 minutes Makes 1 pizza Ingredients: Basic pizza base: 1. 2. 3. 4. 5. 1 cup plain flour (maida) 1 teaspoons fresh yeast (crumbled) teaspoon sugar table spoon olive oil teaspoon salt Cooking time: 25 minutes

Tomato sauce: 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 11. 12. 2 large tomatoes 1 bay leaf 3-4 peppercorns small onion, chopped teaspoon garlic, chopped capsicum, deseeded 1 tablespoon tomato puree 1 tablespoon tomato ketchup teaspoon sugar 1 tablespoon olive oil tablespoon dried oregano Salt to taste

To be combined into a topping: 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 8 fresh mushrooms, blanched and sliced 8 black olives, sliced cup red pepper, diced cup cooked sweet corn kernels 2 3 pickled jalapeno peppers, sliced tomato, diced 1 small onion, sliced 1 tablespoon celery, sliced teaspoon mixed dried herbs or oregano Salt to taste

For Baking: 1. cup cooking cheese, grated 2. 1 tablespoon olive oil

Method: For base: 1. Combine all ingredients except olive oil in a bowl and knead into a soft dough using enough water until it is smooth and elastic 2. Add the olive oil and knead again 3. Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15- 20 mins) 4. Press the dough lightly to remove the air 5. Roll out portion into a circle of 250mm diameter and 6mm thickness For Tomato sauce: 1. 2. 3. 4. 5. 6. 7. 8. Blanch the tomatoes in boiling water Peel, cut into quarters and deseed the tomatoes Chop finely and keep aside the tomato pulp aside Heat the olive oil, add bay leaves and peppercorns and saut for a few seconds Add the onion, garlic and capsicum and saut for a few minutes Add the tomato pulp and allow it to simmer for 10- 15 minutes until sauce reduces a little Add the tomato puree, ketchup, sugar and salt and simmer for some more time Finally, add oregano and mix well. Remove the capsicum, bay leaves and peppercorns and discard.

For Pizza: 1. Spread tomato sauce on the rolled out base and fill with the toppings 2. Top with cheese and finally drizzle the olive oil over it 3. Bake in a pre-heated oven at 180 degrees Celsius for about 20 minutes or until the base is evenly browned 4. Serve hot
