CRUZAT CUVE RESERVE EXTRA BRUT

BASE WINE
Blend: 75% Pinot Noir l 25% Chardonnay. Vineyards: Uco Valley, 4590 fasl (1400 masl). Pinot noir: grown in vineyards located in Tupungato. Harvested during the second week of February. Chardonnay: grown in vineyards located in Tupungato. Harvested during the second week of February. Production: must is obtained by pneumatic pressing in a single pressing step. Then it is cooled and kept at 2C (35,6F) for 24 hours for the settling of suspended particles. The temperature of the clarified must is then raised to 12C (53.6F). The must is then seeded with selected yeasts. The alcoholic fermentation process takes place at temperatures between 14C (57F) and 16C (61F) in stainless steel tanks. The base wine is left to age on its lees for 18 months.

SECONDARY FERMENTATION
Method: traditional Aging: 24 month. Tasting notes: structured and fresh, with an acidity that is balanced by a greater sugar content. Subtle yellow color, with frutal aromas reminiscent of pineapple, passion fruit an cherries. Best paired with seafood and fish with thick sauces, white meats with light sauces, pasta and grilled or griddled meats. Residual sugar: 6,0 g/l
