Andhra Chilli Chicken zakir

Ingredients

Chicken-1 medium Salt-to taste Lemon juice-2tbsp Ginger-4 tbsp Garlic-2 inch piece Curry leaves-6-8 cloves Whole dry red chillies-8-10 leaves Rice-8 to 10 Yogurt-2 tbsp Oil-1/2 cup Refined flour-1/4 cup (maida) Fresh coriander leaves-1/4 cup (chopped)

Method

Cut chic en into !our pieces " t#o legs and t#o breasts$ %a e !our to !ive hal!-inch deep slits on the chic en pieces$ &ppl' salt and t#o tablespoons o! lemon (uice and eep aside$ )rind ginger* garlic* curr' leaves* #hole red chilies and rice to a smooth paste #ith the remaining lemon (uice$ &dd this paste to 'ogurt and #his #ell to a smooth consistenc'$ &dd salt to taste$ &ppl' this 'ogurt mi+ture liberall' on the chic en pieces and leave to marinate !or !our to si+ hours* pre!erabl' in the re!rigerator$ ,eat oil in a pan* roll the marinated chic en in re!ined !lour* and sha e o!! the e+cess !lour and shallo# !r'$ Coo !or one minute* turn over the chic en pieces and coo !or another minute$ -educe heat and coo !or !ive to si+ minutes* turning the chic en pieces !re.uentl' !or uni!orm coo ing$ -emove and drain$ /rans!er the chic en to a shallo# pan and eep on medium heat$ 0prin le chopped coriander leaves* t#o tablespoons #ater and cover #ith a !itting lid$ -educe heat and coo !or !ive minutes on lo# heat or until the chic en is completel' coo ed$ 0erve hot$
