Cucumber sushi crackers

Ingredients
1/4 cup (50 mL) mayonnaise 2 to 3 tsp (10 to 15 mL) wasabi paste 2 green onions, green part only 1/2 thin field cucumber or 1/4 English cucumber 150-g pkg smoked salmon 100-g pkg rice crackers or rice crisps, preferably natural flavour 1 tsp (5 mL) black sesame seeds

Instructions
In a small bowl, stir mayonnaise with 2 tsp (10 mL) wasabi paste. Taste and stir in more wasabi if you wish. Thinly slice onions diagonally. Cut cucumbers lengthwise into quarters, then thinly slice. Cut salmon into thick strips. Spread mayonnaise-wasabi mixture on crackers. Top each with 1 or 2 pieces of salmon, folding if necessary. Then add 2 or 3 pieces of cucumber and a few slices of green onions. Sprinkle with sesame seeds.
