Quick and delicious soyballs recipe

No more sorrow for meat. Heres an old standard with a contemporary vegan twist. You get the health benefits of soy, the great flavor of garlic and spices, leaving you with the comfort of tasty bites.

SOYBALLS Yield: 6 servings (30 soyballs, depends on how big you make them) Preparation time: 15 minutes Baking time: 30 minutes at 450 F (depends on your oven) Ingredients 200 g soy flakes clove of garlic 1 medium onion

1 big carrot Parsley, dill Sea salt, pepper, basil and oregano at your choice 2 spoons of coconut oil 1 spoon of whole wheat flour (optional)

DIRECTIONS Soak the soy flakes in pre heated warm water for 20 minutes. Put them in a sieve to dry them from the extra water. Cut the onion and make sofritto using a frying pan, 2 spoons of coconut oil and 2 spoons of water (salt at your choice), leaving it for 10 minutes at a low temperature. Cut the garlic in small pieces and grate the carrot in thin ones. After the soy flakes and sofritto are done, put everything in a bowl, add the spices and mush everything toghether. If you feel like the composition doesnt stick in small balls, add some whole wheat flower with a bit of coconut oil to help it blend. Shape them with your hands in cute little balls and place them on a pan. I added a special paper, but thats not necessary if you trust your pan. Leave them at a high temperature and check them after 20 minutes to see if they are ready. They should form a crispy crust. They usually need longer time to bake, so dont worry if you feel like youre waiting too much.

After you took them out, leave them to cool down (dont try to get them out of your pan before, they may stick to it) and serve them with

your favorite vegetables or make sandwiches. An idea would be your favorite bread, vegan melting cheese, slices of green salad and tomatoes mhm, yummy!
