Claypot Fish Head
tsp pepper, 1 tbsp rice wine, 1 cup stock Method : 1. Cut fish head into pieces and deep-fry in hot oil till golden brown. Drain. 2. Cut half of the spring onion into shreds, the rest into sections. 3. Heat 1 tbsp oil in the claypot, stir-fry ginger and spring onion sections till fragrant. Put in the fish head and add seasoning. Mix well. 4. Sprinkle with spring onion shreds and serve.
