Red Curry Beef

Ingredients
14 lb of sliced beef 12 large bell peppers 1 container of Thai Style Red Curry 1 13.5 fl. oz can of coconut milk 20 ounces of water cup red pepper flakes 2 Tbsp minced garlic

Tools
1 knife, 1 paring knife Cutting board 3 2 hotel pans 1 very large mixing bowl 1 tong 1 metal spoon Measuring cup & spoons 6 quart pan (mixing sauce) Whisk 1 spoodle

Cooking time: 1 hour 20 minutes Mise en place: Preheat the oven to 350oF Wash the bell peppers thoroughly under cold water Set up the work station with a cutting board, a knife 1 2 hotel pan for the peppers 2 2 hotel pan for the meat, peppers and garlic

PREP THE SAUCE

In a 6 quart pan mix the curry sauce, coconut milk, water, red pepper and whisk together.

Cut the bell peppers then onions into strips. Place the bell peppers in one 2 hotel pan and place the onions into the other two 2 hotel pans. Cover the bell peppers with a foil and when ready to bake, cook for 20 minutes.

In the hotel pan with the onions, add a tablespoon of minced garlic.

Divide the beef evenly and add to the hotel pans with the onions and garlic. Using the spoodle, pour the sauce liberally over the meat and onions. Put the meat into the oven and cook for 25-30 minutes. Stir the meat every 8 10 minutes.

Remove the bell pepper from the oven and allow to cool. When the meat is ready, be sure to take the internal temperate. In a large mixing bowl, mix the meat and bell peppers. Use a spoodle to add more sauce. Transfer to a hotel pan and serve.
