Carrot & Coriander Soup
Ingredients: Equipment:
1large carrot large saucepan
Half a potato sharp knife
Onion measuring jug
- 1 ltr stock or water wooden spoon
2 tsp ground coriander bamix blender
Dried coriander
Sprig of fresh coriander
Salt and pepper
Method
1. Chop up the vegetables, the onion fairly finely and the
carrot and potato small dice. Finely cut most of your
fresh coriander, leave a sprig for the presentation.
2. Heat the oil and sweat the onion for 4 minutes, add the
ground coriander and potato and cook for 1 minute.
3. Add the carrot and pour in the stock. Bring to the boil
and keep it boiling for 5 minutes, reduce the heat and
simmer for 20-25 minutes until all is cooked. Add some
coriander near to the end of cooking time.
4. Remove from the heat and blitz with the blender to the
consistency you like. Season to taste.
5. Pour into a bowl and garnish with some fresh coriander.
