Experiment 2

Tom Yum Soup


Important Note
Aprons and hairnets must be worn PRIOR to entering the Food
Technology Lab.
Wash your hands BEFORE handling any food or equipment.

Ingredients

Method
Step 1: Preparation
Slice chicken before anything else
Slice onion into thin slices
Slice lemongrass into thick slices
Slice ginger into thin slices
Slice the mushrooms into
Peel kaffir leaves of stem
Slices the leaves off the coriander and put aside for garnish
Slice storks of the coriander thickly to put in the stock
Take seeds out of chili
Slice tomatoes in
Squire lime juice into bowl

Step 2: Cooking
In a large pot put chicken stock to boil
When the chicken stock is boiling stir in tom yum paste and garlic and cook for 2 min.
After 2 min stir in Kaffir leaves, lemongrass, coriander stalks to simmer for 5 min.
When the chicken stock is bubbling add chicken, fish sauce and sugar and let it boil for 5-6 min until chicken is cooked.
After chicken is cooked add coconut milk, mushrooms, tomatoes and onion and leave it to boil on medium for 2 min.

Step 3: Presentation
While boiling on medium add lime juice, chili, shallots and coriander into a bowl.
After 5-6 min soup is ready put soup into the bowl with other ingredients and stir.
Garnish with Coriander and onions.
