EGG NARGISI KOFTA

Ingredient Quantity
Eggs 4
White bread slices 2 slices
Ghee 3 tablespoons
Onion ,minced 1 medium
Green chillies,minced 2
Salt to taste
Tomatoes,blanched and peeled chopped 2 medium
Fresh coriander leaves,chopped 4 sprigs
Garam masala powder 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Black pepper powder to taste

METHOD

Place eggs in a pan with three cups of water. Boil for ten minutes and let cool.
Shell and keep aside. Crumble bread slices and soak in cold water till
soft. Drain and squeeze out all the liquid and mash well with a fork.
Cut the eggs lengthwise, and remove the yolks. Mash the egg yolks, add
mashed bread and one tablespoon of melted ghee. Stir in a little of the minced
onion, minced green chillies, a pinch of salt and mix well. Stuff this mixture in
the hollow of the egg white and place the stuffed eggs carefully in an ovenproof
dish. Preheat oven to 180C.

To make the tomato sauce, fry remaining minced onion in remaining ghee till
the colour turns pink. Add tomatoes, coriander leaves, garam masala powder,
red chilli powder, salt and pepper powder to taste. Simmer till the sauce is
cooked. Pour the tomato sauce over the stuffed eggs. Cover the dish and bake in
the preheated oven for ten minutes at 180C.
Serve hot.
