Manchester Metropolitan University are currently Kitchen Duty Manager to manage all aspects of food production from purchase to service in catering unit(s) always ensuring high quality , KPIs and profitability in a changing and challenging environment. The duties of the job include:
To ensure all food is prepared and delivered to a consistently high standard which exceed customer expectations To manage the daily food production within the relevant kitchen ensuring all food products are purchased within MMU procurement guidelines To be responsible for the hot food counters and make sure they are checked regularly throughout service To take responsibility for reporting and monitoring kitchen and service wastage. To ensure that all hospitality menus are produced to the highest standard, and work in conjunction with Executive Chef and Campus Catering Manager to plan and co-ordinate the production and delivery of food for dinners and events.

The ability to plan, cook and deliver menus to a high standard. The ability to work accurately under pressure, prioritise work and meet specific deadlines and to ensure high productivity of kitchen staff. Proven ability to supervise and motivate a diverse catering team and able to give clear instruction and guidance and deal with sensitive issues. Proven ability to interact with a broad range of customers and able to anticipate customer needs. The ability to devise and implement quality control measures to ensure hygiene, cleanliness, food standards and service standards are exceptionally high. The ability to collate information to produce reports and recommendations in order to improve levels of service.
