Recipe: Healthy Chicken Soup for Every Soul

Ingredients:
200 gms boneless chicken breasts
60 gms onions
5 gms garlic
2 gms ginger
1 gm black pepper corn (Optional)
3 gms cooking salt
20 ml cooking oil

Method:
1. Clean and cut chicken into small pieces.
2. Peel and dice the onions. Wash with water and drain; keep on the kitchen towel to absorb excess
moisture.
3. Peel and cut garlic into small pea-sized dices (this allows only limited flavor into food, but great if
your kid is little big, they can eat this as corn-look-like-pieces)
4. Wash, peel and dice ginger into pea-sized shape.
5. Heat oil in a soup pan and add black pepper, garlic and onion. Saut till onion turns translucent,
add ginger and stir for a while.
6. Add chicken pieces and continue cooking till chicken turns white from outside, but remains un-
cooked.
7. Add 1 litre water and bring to boil, simmer for 25-30 minutes.
8. Strain and discard all solids, chicken pieces could be retained for curry making or given to elders
with soup as garnish. Add and adjust seasoning.
