Vanilla Cupcakes

Ingredients:
1 cup flour
1 tsp baking powder
1 tsp baking soda
tsp salt
cup mayonnaise
cup sugar
1 tsp vanilla extract
cups buttermilk *(Can be 2 1/2 tbsp powder + 3/4 cup water OR cup milk + 1 tsp vinegar)
Procedures:
1. Preheat oven to 350 F.
2. Sift flour, baking powder, baking soda and salt.
3. On a separate bowl, mix mayonnaise, sugar and vanilla.
4. Add 1/3 of the dry mixture to liquid mixture.
5. Add cup buttermilk.
6. Repeat steps 4-5.
7. Fill each liner 45-50ml batter. Bake for 15-18 minutes.








Chocolate Cupcakes

Ingredients:
1 cup flour
cup cocoa powder
tsp baking soda
1 tsp baking powder
cup mayonnaise
cup sugar
1 tsp vanilla extract
cup water or milk
Procedures:
1. Preheat oven to 350 F.
2. Sift flour, cocoa powder, baking soda and baking powder.
3. On a separate bowl, mix mayonnaise, sugar and vanilla extract.
4. Add 1/3 of dry mixture to liquid mixture.
5. Add 3/8 cup of water or milk.
6. Repeat steps 4 and 5.
7. Fill each liner 45-50ml. Bake for 15-18 minutes.
