Vit Nam nm trong vng kh hu nhit i gi ma nn c ngun rau


qu phong ph: Da chut, khoai ty, xu ho, c rt, bp ci, c chua,...tuy
nhin rau qu li thu hoch trong thi gian ngn vi s lng ln v vy
khc phc vn ny ngnh ch bin rau qu ra i v ngy cng chim
c u th trn th trng. Sn phm rau qu ca Vit Nam c nhiu
nc trn th gii bit n vi cc sn phm mang hng v c trng c
bn b quc t yu thch nh sn phm da chut dm gim, tng t, da
khoanh nc ng, vi thiu ng l...
Khng phi quc gia no cng c thin nhin u i, c ngun rau
qu phong ph nh nc ta m c nhiu quc gia c kh hu khng thun li
cho sn xut rau qu. V vy cc quc gia ny phi nhp khu cc sn phm
rau qu ca cc nc khc trong c Vit Nam.
Nm bt c nhu cu ca cc nc ny m cc cng ty ch bin thc
phm ti Vit Nam trong c Cng ty C phn xut nhp khu rau qu
Phng ng tn dng u th cnh tranh ca mnh trn th trng l:
ngun nguyn liu rau qu c sn trong nc v ngun nhn cng di do, lao
ng tr... sn xut ra cc sn phm rau qu ng hp phc v cho nhu
cu ca ngi tiu dng. Cc sn phm ny rt a dng v phong ph, trong
da chut dm gim l sn phm ng hp c nhiu quc gia s dng
nh: Mng C, M, Nga, Nht
Da chut dm gim l loi sn phm c lm t da chut bao t,
trung t v c phi ch thm cc loi gia v khc nhau nh ti, t, c rt,
cn ty. Ty theo khu v ca mi nc m t l, thnh phn cc loi gia
v cho vo l khc nhau. Mi cng ty c phng thc sn xut ring c
u th cnh tranh trn th trng.

TNG QUAN
2.1. Gii thiu chung v cng ty

2.1.1. S hnh thnh v pht trin ca cng ty


Cng vi s tin b ca khoa hc k thut-cng ngh v s pht trin
ca mt s lnh vc trng yu khc, ngnh cng ngh vi tim nng to ln v
vai tr ht sc quan trng trong nn kinh t nc ta. N va p ng nhu cu
trong nc v to ra mt hng xut khu.
Xut pht t tnh hnh trn, ngy 21/02/2005 Cng ty c phn xut
nhp khu rau qu Phng ng c thnh lp di s iu hnh ca gim
c Mnh Qun ng ti x Vit Tin- Huyn Vit Yn-Tnh Bc Giang vi
din tch mt bng 3 ha
Trong : Din tch nh xng l 1000m 2, din tch kho bo n l
1700m2, khu vn phng l 125m2.
Ngay t khi mi thnh lp, cng ty ch sn xut cc mt hng: da
chut dm gim, c chua dm gim t dm gim vi 25 lao ng chnh thc
v c 300 lao ng thi v hot ng mt xng
Vi phng chm a dng ha sn phm v m rng th trng, nm
2007 cng ty m rng thm mt nh xng c din tch l 600m 2 v c mt
nh kho c din tch l 1500m2 a sn xut da. T nm 2007 n nay
c 30 lao ng chnh thc v 500 lao ng thi v hot ng hai phn
xng.
Vi cc sn phm t cht lng cao, cng ty c khch hng bnh
chn l sn phm c uy tn v nhn c nhiu bng khen, giy khen ca B
thng mi, ch tch UBNN, s thng mi v cc c quan qun l khc.
in hnh, cng ty c B thng mi tng bng khen: L mt trong 10
cng ty trin vng nht ca tnh Bc Giang. Doanh nghip ang p dng
thnh cng h thng qun l cht lng ISO 9001-2000 v ang trin khai h
thng qun l cht lng sn phm HACCP.

2.1.2. V tr a l ca cng ty
Cng ty c phn xut nhp khu rau qu Phng ng thuc a phn
x Vit Tin, Huyn Vit Yn, Tnh Bc Giang. Nm cch quc l A1 c
khong 9km. Gn hn na:
Pha ng gip: Thn Vn H.
Pha Ty gip: Ng ba K Trng.
Pha Nam gip: Quc l 37.
Pha bc gip: X Ngc Vn- Huyn Tn Yn.
C v tr a l thun li, giao thng thun li cho vic thu mua, vn
chuyn nguyn liu v xut khu sn phm hng ha. Nht l thun li v
ng b gp phn y mnh hot ng sn xut kinh doanh ca cng ty
c hiu qu.
2.1.3. H thng b my hnh chnh ca cng ty
Gim c: L ngi ng u cng ty, chu mi trch nhim trc
php lut v ton b hot ng sn xut kinh doanh ca cng ty mnh. Ngi
trc tip qun l, iu hnh v ch o mi hot ng ca nh my
Ph gim c: Gip gim c qun l, iu hnh cc mng m gim
c giao ph ng thi thay mt gim c qun l iu hnh cng vic khi
c y quyn
Phng t chc hnh chnh(TC-HC):b L c quan gip vic cho gim
c t chc b my qun l lao ng, nhn s hnh chnh
Phng ti chnh k ton (TC-KT): Gip gim c qun l ti chnh,
s sch k ton v cung cp, u t vn cho hot ng sn xut kinh doanh,
ng thi hon thnh quyt ton nhim v sn xut kinh doanh
Phng nghip v kinh doanh: Tham mu cho gim c xy dng
chng trnh, k hoch, mc tiu ca hot ng sn xut kinh doanh.
Phng nng v: Tham mu, xut vic u t pht trin vng
nguyn liu ca cng ty phc v sn xut. Hng dn k thut cho nng
dn sao cho cht lng sn phm l cao nht. Bn cnh , t chc thu mua
nguyn liu.
Phng k thut cng ngh KCS: Kim tra cht lng sn phm
tng cng on, nghim cu sn phm m.

Phn xng sn xut: Tip nhn nguyn liu v duy tr hot ng sn


xut ch bin, c th ha mc tiu kinh t k thut p ng nhu cu ca khch
hng.
2.2. Gii thiu v hp rau dm gim:
2.2.1.Khi qut chung:
Sn phm hp rau ngm gim (dm gim) hay cn gi l marinat
rau l sn phm c ch bin t cc loi rau cng vi gim n, mui ng
v cc gia v, sn phm c ng trong hp st hoc l thu tinh ghp kn v
thanh trng. Nc dm c tc dng lm tng hng v sn phm v trong
gim cn c vai tr ca mt cht bo qun. [6]
Khi mi trng c pH t 4 tr xung, cc vi khun gy thi nh
Bacterium.coli, Bacterium.proteus, Bacterium.putrificus, Bacillus.subtilis,
b c ch v cc nha bo ca nhiu loi vi khun tuy khng b tiu dit nhng
cng khng pht trin c.
Trong mi trng acid acetic long, nm mc, vi khun chu acid v
mt s vi sinh vt hiu kh khc vn pht trin c. Mui v cc tinh du
thm c trong gia v cng c tc dng st trng. Vi nng acid acetic
khng qu 1.8% th m bo mi v sn phm (cao qu sn phm c mi v
gt), nhng khng m bo cho sn phm khi hng. V vy sn phm
c bo qun nhit thp di 12oC. Nng acid cng long th nhit
bo qun cng thp, vi acid 0.9 1.2% sn phm phi bo qun 0oC,
nu nng acid thp hn 0.9 % sn phm cn c thanh trng, v nng
khng c ch hot ng ca vi sinh vt d nhit bo qun thp.

Nguyn liu chnh dng ch bin hp rau dm gim ch yu l
da chut, c chua (xanh, chn), bp ci, c rt, sp l, su ho,Nguyn liu
ph v ph gia thng dng l cn ty, th l, hnh, ti, t cay, tiu, ng
knh, mui n, gim hoc acid acetic.
Hin nay trn th trng c mt s sn phm rau hp dm gim nh
da chut, mng, bp non, t cay, ti, c kiu
2.2.2. Phn loi:
Da vo hm lng acid acetic trong sn phm ngi ta phn loi rau
dm gim thnh cc dng sau: [6]
-Rau dm gim t chua, thanh trng: Hm lng acid acetic l 0.4 0.6%.
-Rau dm gim chua, thanh trng: Hm lung acid acetic l 0.61 0.9%.
-Rau dm gim chua gt, khng thanh trng: Lng acid acetic l 1.2
1.8%.
-Salad: l hp dm gim hn hp nhiu loi rau, trong nguyn liu
chnh chim ch yu v c pha thm du thc vt.
2.3.Gii thiu v tnh hnh nguyn liu s dng
2.3.1.Ngun gc v phn b ca cy da chut
Da chut thuc h bu b c ngun gc vng nhit i m thuc
nam Chu , l loi cy a nhit. Nhng nm cui ca th k XX, da
chut l cy rau chim v tr quan trng trong sn xut rau trn th
gii. Nhng nc dn u v din tch gieo trng v nng sut l:
Trung Quc, Lin X, Nht Bn, M, H Lan, Th Nh K, Aic p, Ty
Ban Nha. Theo FAO ( 1993) din tch da chut trn th gi i l
1.178.000 ha, nng sut 15,56 tn/ ha v sn lng t 1.832.968
tn. nc ta nhng nm gn y da chut tr thnh cy rau
quan trng trong sn xut, c ngha ln v hiu qu kinh t v gi i
quyt vn v thc phm.[9]

2.3.2. Cc ging da chut


a/ Da chut Yn M
Cy cao t 2 2,5m, nh, l c mu xanh vng. T khi gieo n thu
qu la y khong 50 54 ngy. Thi gian sinh trng 90 100 ngy. Khi
lng qu 93 102,8g. ng knh qu 3,1 3,2cm, chiu di qu 17
18,4cm, nng sut trung bnh t 26,9 28,0 tn/ha. Su hi ph ch yu l
rp, b tr v rui c l. Cy chng chu bnh phn trng mc trung bnh.
Nhc im ca ging da chut Yn M l chng bin vng sau thu hi.
Ging Yn M c th gieo trng vo v xun v v ng vng ng bng
sng Hng [9].
b/ Ging da chut CV5 v CV11 (Vin nghin cu Rau qu).
Qua nghin cu v cc m hnh th nghim ti cc tnh nh Hng
Yn, Bc Giang, Vnh Phc cho thy hai ging da chut CV5 v
CV11 sinh trng pht trin kho, thn l mu xanh m, phn cnh
kh, nhiu hoa ci, t l u qu cao.
c/ Ging PC1, Sao xanh 1
Do GS.VS V Tuyn Hong v cng s lai to.Thi gian sinh trng
tng i ngn, cho nng sut cao, n nh, c ngi tiu dng a thch [9].
d/ Ging da chut Hu Ngh
L ging lai gia ging Vit Nam (Qu V) v Nht Bn (Nasu
Fuxinari) do Vin Cy lng thc v thc phm chn to cho nng sut cao,
phm cht tt, chn sm, chng bnh, thch hp trng trong v ng ng
bng sng Hng.
e/ Ging da chut bao t mi AJA [16]
Trung tm Khuyn nng - Khuyn lm Bc Giang va t chc hi tho
u b nh gi kt qu m hnh trng da chut bao t ging AJAX (H
Lan) ti huyn Tn Yn.
M hnh sn xut da bao t AJAX c thc hin ti th trn Cao
Thng (huyn Tn Yn, Bc Giang) t thng 3-2007 vi din tch gn 3 ha.
Thc t sn xut cho thy, ging da ny c mt s u im ni tri nh: kh

nng thch ng vi thi tit tt, hiu c nhit t 33 - 35 oC m qu khng


b bin dng, khng c bnh sng mai, chu thm canh cao, kch thc
qu ng u, nng sut trung bnh t gn 950 kg/so.
T kt qu ca m hnh, Trung tm khuyn khch nng dn m rng
din tch trng da bao t AJAX trong cc v tip theo.y cng l ging
c cng ty u t trng, nhp lm nguyn liu sn xut chnh.
Nhn chung cc ging da chut hin c ca chng ta cn cha p ng
c yu cu v sn xut v tiu dng. Cc ging a phng vn cha c
khai thc trit trong cng tc chn ging da chut Vit Nam. Cha c
nhng ging chuyn dng cho ch bin v phc v xut khu m thng phi
nhp t nc ngoi nh: ging da chut lai F1 TO, TK ca Nht Bn; ging
da chut bao t nhp t Thi Lan MTXTE; ging Marina qu chm hoc ging
Levina qu n, v.v.., gi ht ging cao. l mt yu t quan trng dn n
chi ph sn xut trn n v din tch tng.
2.3.2. Thnh phn dinh dng
Cc loi rau ni chung v da chut ni ring l loi thc phm cn
thit trong i sng hng ngy v khng th thay th. Rau c coi l
nhn t quan trng i vi sc khe v ng vai tr chng chu vi
bnh tt. Theo kt qu nghin cu ca nhiu nh dinh dng hc
trong v ngoi nc th khu phn n c a ng i Vi t Nam c n
khong 2300 - 2500 Calo nng lng hng ngy sng v hot
ng. Ngoi ngun nng lng cung cp t lng thc, rau gp phn
p ng nhu cu dinh dng cho c th con ngi. Rau khng ch m
bo cung cp ch s Calo trong khu phn n m cn cung cp cho c
th con ngi cc loi vitamin v cc loi a, vi lng khng th thiu
c cho s sng ca mi c th. Hm lng vitamin trong rau kh cao
li d kim.
Da chut l mt thc n rt thng dng v cn l mt v thuc c gi
tr. Thnh phn dinh dng gm Protein (m) 0,8g; glucid ( ng)
3,0g; xenlulo (x) 0,7g; nng lng 15 kcalo; Canxi 23mg; Phospho
27mg; St 1mg; Natri 13mg; Kali 169mg; Caroten 90mcg; Vitamin B1
0,03mg; Vitamin C 5,0 mg.

Trong thnh phn ca da chut cha hm lng cacbon rt cao khong 7475%, ngoi ra cn cung cp mt lng ng (ch yu l ng n).
Nh kh nng ha tan, chng lm tng kh nng hp th v lu thng
mu, tng tnh hot ng trong qu trnh oxi ha nng lng ca m t
bo. Bn cnh trong thnh phn dinh dng ca da chut cn c
nhiu axit amin khng thay th rt cn thit cho c th nh Thianin ( 0,024
mg%); Rivophlavin ( 0,075 mg%) v Niaxin ( 0,03 mg%), cc loi mui
khong nh Ca( 23,0 mg %), P( 27,0 mg%), Fe( 1,0 mg%). Tng cng
phn gii axit uric v cc mui ca axit uric (urat) c tc dng li tiu, gy

cm gic d ng. Khng nhng th trong da chut cn c mt lng


mui kali tng i gip tng cng qu trnh o thi nc, mui n
trong c th c li cho ngi mc cc bnh v tim mch.
2.1.4 Gi tr kinh t v s dng
Trong cc loi rau trng hin nay, da chut l cy ng th 4 trn th
gii v chu v din tch (2377,888 nghn ha nm 2003), ng th 3 v sn
lng thu hoch (37,6 triu tn nm 2003). Da chut l mt trong nhng loi
rau n qu c gi tr kinh t rt cao trong ngnh sn xut rau ca nhiu nc
trn th gii. Trong nhng nm gn y theo s liu thng k, din tch trng
da chut c nc nm 2003 t 18,409 nghn ha, chim 3,2% din tch trng
rau cc loi trn t nng nghip, tng 30% so vi nm 2000, trong Min
Bc trng 5,550 nghn ha, chim 33% din tch trng da chut c nc.
Nng sut trung bnh ca da chut nc ta hin nay mi t xp x
90% so vi trung bnh ton th gii (173,1 t/ha). Tuy nhin, vng ng bng
sng Hng t nng sut 20485 t/ha trn din tch hng nm hn 3300 ha.
Vi sn lng xp x 300000 tn da chut hng nm, phn ln c
s dng trong nc dng ti, cn li cho ch bin xut khu. Theo s
liu ca Tng Cng ty Rau qu v Nng sn, nm 2003, cc doanh nghip
nh nc xut khu 1675 tn da chut, t kim ngch xut khu
1075529,44 USD vi cc sn phm: da chut dm gim t 1237 tn, kim
ngch 667529 USD v da chut mui t 408 tn, kim ngch 113120
USD. Ngoi ra cn c cc cng ty lin doanh, cng ty trch nhim hu hn
t chc sn xut v xut khu vi gi tr ln hn hng chc ln.
Ngoi gi tr v dinh dng th xt v mt kinh t da chut l cy rau
qu quan trng cho nhiu vng chuyn canh mang li hiu qu kinh t cao.

Trong qu da chut c cc loi cht dinh dng cn thit cho c th


nh protein, cc loi vitamin A, C, B1, B2.... Trc y da chut c s
dng nh loi qu ti gii kht. n khi th trng trong nc cng nh
th gii m rng, nhu cu ca ngi tiu dng phong ph th vic a dng ha
cch s dng l tt yu. Ngy nay da chut c s dng di nhiu dng
khc nhau nh qu ti, trn salat, ct lt, ng hp xut khu...
Bn cnh da chut cn l cy rau qu quan trng cho nhiu vng
chuyn canh mang li hiu qu kinh t cao, thi gian sinh trng tng i
ngn, chi ph u t thp c th m rng trn nhiu vng kinh t khc nhau.

2.1.5 Gii thiu s lc v sn phm da chut bao t dm gim.


Sn phm da chut bao t dm gim l loi sn phm hp mui
chua c v chua cay, mn ngt rt hi ha, da gin chc v ngon, c hng
thm c trng d kch thch khu gic ca ngi tiu dng v ph hp vi
khu v ca ngi tiu dng.Da chut bao t dm gim l sn phm c
ch bin t da chut bao t ngm trong nc dch dm. Nc dch dm bao
gm dung dch dm, ng, mui n v cc loi gia v khc nh c rt, ti, t,
th l, cn ty.Nc dch dm c tc dng tng hng v cho sn phm,
ng thi n cn c vai tr nh cht bo qun, khi mi trng c Ph thp
hn 4 lm c ch s pht trin ca vi sinh vt c bit l vi khun.Ngoi ra
mui v cc tinh du thm c trong gia v c tc dng st trng ko di thi
gian bo qun tng hng v cho sn phm.
Ngoi nhng gi tr v mt dinh dng th da chut bao t dm gim
cn c tc dng kch thch s tiu ha.
V vy, y l loi sn phm c a chung rng ri trn th trng
sn phm khng nhng ph hp vi th hiu ngi tiu dng trong nc m
n cn l sn phm a chung nc ngoi.Chnh v iu m mt hng
ch yu ca cng ty l da chut dm gim.

2.1.6.1. Nguyn liu:
Nguyn liu chnh sn xut da chut dm gim l da chut bao t,
trung t, ngoi ra cn c cc nguyn liu ph khc l ti, t, th l, c rt...
Ty theo n t hng c th thay ti bng hnh ty v thay i mc cay
ca sn phm.
Nguyn liu chnh: Da c cng ty nhp t nhiu vng khc nhau
nh Bc Giang (Lng Giang, Tn Yn, Hip Ha), H Nam, Hng Yn,
Hi Dng Nguyn liu da chut dng sn xut hp da chut dm
gim rt a dng.
Nguyn liu chnh l da chut
Da chut trc khi a vo sn xut phi t c cc yu cu sau:
Qu ti, thng, non xanh khng su thi, khng dp nt, t ht, v
mng, rut c c mu trng gin, bung ht ca qu khng ln v ht cha

Da sau khi thu hoch xong phi vn chuyn v cng ty ngay. Nhng
qu da c hm lng cht s t, hm lng ng nhiu l nhng qu c
cht lng tt .V vy da trung t c cht lng thp hn da bao t.
Do nguyn liu rau qu ni chung v da chut ni ring c cha cht
dinh dng nh protein, gluxit, vitamin, khong cht v c bit l hm lng
nc cao. V vy l mi trng thun li cho s pht trin ca vi sinh vt,
nm men, nm mc gy h hng. Do cn tin hnh cn thn ng quy
trnh k thut t khu thu mua v vn chuyn nguyn liu.
Ty theo tnh hnh sn xut m c th tin hnh sn xut ngay hay bo
qun tm thi. Da chut vn chuyn v nh my ri th tt nht l em sn
xut ngay. Nu cha sn xut th hy bo qun tm thi. Da chut bo qun
trong kho theo tng , ni thong mt ri a vo sn xut theo th t thi
gian giao nhn hng. Ta nn bo qun da trong thi gian ngn, khng qu
24h nhm trnh s hao ht c v s lng v cht lng.
Nguyn liu ph:
Ngoi nguyn liu chnh l da chut th khi i vo sn xut da chut
dm gim ta cn dng thm cc nguyn liu ph ch bin. Nguyn liu ph
cn phi c rau gia v: c rt, tiu, t, ti, th l, cn ty, hnh ty...v nguyn
liu dng lm dch dm nh: mui, ng, acid, nc. Nguyn liu ph
gia chim t l rt t nhng li v cng quan trng, n nh hng ti cht dinh
dng v cht lng cm quan ca thc phm
*Rau gia v:
Rau gia v c s dng rng ri trong hp da chut dm dm bao
gm: th l, cn ty, t, ti, c rt.
Vai tr ca vic s dng rau gia v:
+ Lm tng thm cht dinh dng cho sn phm.
+ To mi c trng v tng cht lng cm quan cho sn phm
+ Mang tnh cht st khun cao do c ngha khi bo qun sn
phm c lu hn.
V tiu chun cht lng rau gia v c s dng trc khi a vo sn
xut.

- Rau th l v cn ty: yu cu phi cn xanh, ti, khng a vng, su


thi hay dp nt. Sau em ra sch v ct khc khong 2-3 cm ro nc
ri xp vo mi l khong 3-4 g.
Th l v cn ty c tc dng lm tng cm quan v mui v cho sn
phm ng thi n cn c tc dng lm tng thi gian bo qun.
- Ti: dng ch bin l ti dng c kh, yu cu c to v u, pht
trin bnh thng, my. Khng dng c ti b su bnh hay bi mi mt, mc,
c ny mm. Ti c thi lt mng khong 2mm (ch phi dng dao
inox trnh lm ti thm en).
Ti cho vo c tc dng lm tng mi thm cho sn phm do trong ti
co cha hm lng tinh du chim t 0,06%-0,2% m ch yu l alixin.
Trong ti cn cha hm lng phiton xit co tac dng khng khun.
- t: yu cu khi mua v phi cn ti nguyn, t phi c mu v
t cay c trng. Khng dng t xanh, t ch thin, t b su thi, dp nt.
Dng dao ct lt dy khong 0,1 cm ri em i loi b ht.
t cho vo c tc dng to v cay cho sn phm. Trong t c cha
Capxaixin 0,5%-1% c tc dng c ch hot ng ca vi sinh vt, lm tng
thi gian bo qun sn phm. Ngoi ra, t c mu lm tng gi tr cm
quan cho sn phm.
- C rt: dng loi c rt c mu vng hoc mu , c trn, u, ti,
t nhin, t s, li nh. Khng dng nhng loi c b gi, thi, li to, dp nt
hoc c c mu xanh.Kch thc ca c khng c qu nh. C rt c gt
sch v thi lt mng.
Ngoi vic cung cp thm vitamin cho sn phm thi c rt cn ong vai
tro chnh l to cht lng cm quan cho sn phm.
- ng: l nguyn liu khng th thiu trong sn phm dm dm v
yu cu ca sn phm l phi c v chua cay ngt hi ha. ng cho vo sn
phm nhm iu chnh t l ng/acid.
ng c tc dng to v ngt cho sn phm, nng cao gi tr dinh
dng cho sn phm ng thi kt hp vi acid tang cht lng cm quan to
v c trng cho sn phm.

- Mui: Mui c s dng cho vo sn phm l mui n NaCl. Yu
cu ca mui l phi c tinh khit cao, kh, c tan tt, c mt mu
trng tinh khit, khng ng cc, khng ln cc tp cht v c v hu c
khc.
Mui co tc dng to v mn, tng khong cht, tng khu v, gi mu
sc v to gin cho sn phm. Ngoi ra, mui cng c tc dng st khun,
dit khun, km hm s pht trin ca vi sinh vt v ko di thi gian bo
qun.
- Nc: nc dng trong sn xut l nc sch m bo v sinh anh
ton thc phm v nc phi t tiu chun sau:
+ Nc phi t ch tiu kh trng trong ch bin.
+ Nc phi m bo tinh sch trong sn xut, khng c cc vi sinh
vt ly nhim cho con ngi (Da vo ch s E.coli v khng c rong to).
+ Nc l nc mm.
+ Trong nc khng cha cc kim loi nng, hm lng Fe, Mn ni
chung mc thp khng c cht phong x.
- Acid: s dng pha ch dung dch l acid axetic v acid sorbic. Acid
c dng nhm iu chnh t l ng /acid cho sn phm. Acid lm cho
da sn phm c mu vng t nhin. acid to chua cn thit, sn phm tr
ln gin v d hp th hn.
Acid dng trong ch bin phi c nguyn cht cao, ln hn 98%, l
dung dch trong sut khng mu, c mi thm c trng.
Acid a vo vi t l nht nh s lm gim pH ca mi trng sn
phm (pH<4) c tc dng c ch hu ht cc sinh vt khng c li nhm ko
di thi gian bo qun, s dng.

Qu trnh phn loi dnh gi theo phng php cm quan. Qu trnh
ny c thc hin theo phng php th cng v phn loi bng thit b
phn loi.
Phn loi theo phng php th cng: Trc tin ta phi quan st sau
dng tay phn loi. V vy qu trnh ny phi c thc hin mt cch
nghim tc v ng yu cu k thut to ln sn phm cui cng t tiu
chun.
- i vi da chut: da c ri ra nn nh sch vi nhng nh
thun li cho qu trnh phn loi. Sau cng nhn dng tay phn loi th
cng vo cc st, phn loi theo yu cu ca cn b k thut trong cng ty.
Nhng qu dp nt, su thi, khng t tiu chun loi b ra ngoi.

phn v bn ngoi nhm loi b phn c gi tr dinh dng thp v tng cht
lng cm quan cho sn phm. Sau ra li cho sch v ct thnh tng
khoanh mng, dy khong 1-2mm.
Nu ng knh ca c c rt>=40mm th b i sau ct nt.
Nu ng knh ca c c rt=<40mm th ct khc di 30mm ri dc
theo b dy1-2mm.
Phn loi bng thit b phn loi: Nguyn liu c a vo phn loi
bng thit b phn loi cc loi da vi nhng kch thc khc nhau theo yu
cu.kch thc cc loi da sau phn loi : Da 2- 4cm, 2-5cm, 3-6cm, 69cm.

lp gai nh bng nha mm, lp gai c tc dng ch st vo gai da lm cho

I.1.6.4. Ngm, ra:
* Mc ch:
- Ngm lm cho b cc tp cht, cht bn, t ct, vi sinh vt... bm
dnh trn v qu da to iu kin cho qu trnh ra c d dng nhanh
chng v t hiu qu cao.
- Loi b cc ha cht, lng thuc bo v thc vt hay cc cht c

- Lm sch phn, hoa gai da.

- To iu kin thun li cho qu trnh tip theo: cho da vo l, thanh

* Yu cu:
- Da sau khi ngm ra phi sch, khng cn dt ct, khng cn phn
hoa v gai da, sch vi sinh vt v loi b hon ton thuc bo v thc vt,
cc cht dinh dng b tn thng l thp nht.
- Da sau khi ra xong khng b xy xc, dp gy.
- Nc dng ngm da phi l nc sch, m bo tiu chun nc
sinh hot, khng c vi sinh vt gy bnh.
- i vi nc ngm phi m bo sch, c pha thuc st trng
Cloruamin B vi t l 1/10000- 3/10000, thi gian ngm khong 30-40 pht,
khi ngm phi ngp hon ton trong nc v trong dung dch cloruamin B.

* Phng php tin hnh:
- i vi da: u tin c vo cc thng ngm c pha sn thuc st
trng Cloruamin B vi t l 1/10000- 3/10000, thi gian ngm khong 30-40
pht. Sau chuyn sang my ra v xoa gai. Ti y da c dn u trn
my, da c lm t nh h thng dng nc phun xi nn hai bn ng dn
nc c c cc l nh phun nc vi p sut cao. Bn trong bung my c

- Lm sch rau gia v, nh hnh: Th l, ti, cn ty, t, c rt c cho
vo cc chu ngm ra khc nhau. Sau bm nc sch vo y chu
thc hin qu trnh ra. Ra khong 3-4 ln n khi nc trong l c, sau
vt ra r kh ro v em i xp l.

*Mc ch:
- To ra sn phm c khi tnh theo yu cu.

- Sau khi xp l xong phai m bo khi lng tnh theo yu cu ca
tng l:
+ L 550ml: 250-270 gr/l
+ L 750 ml: 375-400gr/l
+ T l ci / nc l 50/50
- Trong qu trnh xp l phi thnh phn ph gia.
Nguyn liu ph c chn la v c lm sch trc khi a vo
ch bin loi b t, ct, r v cc tp cht khc bm trn nguyn liu.

Sau khi cho gia v vo l th ta tin hnh cho qu da vo.ta phi xp
cht da v rau gia v khi rot dch khng b ni ln trn ming l. Khi cho

quay xung di, u cung qu quay ln trn.t l ci / nc phi t tiu
chun ra v khi lng. nguyn liu sau khi xp xong phi p v hnh
thc tc l nhn xung quanh l y v thy p khng ln tp cht.
Qu trnh xp l c thc hin theo phng php th cng. Trong qu
trnh ny da li c chn mt ln na. i vi da th c 2 phng php
vo l:
- Phng php da xp
Dng tay thun gi da, xp mt vng ngoi tht p. Sau lt da
bn trong vng sao cho khi lng tnh. Thao tc ny do cng nhn lm
th cng bng cch da ra bn v vo l.
- Phng php lm da di

* Yu cu:
- Nhit ti thi im rt dch ln hn 85 0C, rt dch phi nhanh
m bo chn khng khi ghp np v gim c thi gian nng nhit trong
qu trnh thanh trng.
- Dch khng c mi l khng ln tp cht.
- Dch rt c hng v c trng, phi rt y l v ngp nguyn liu
trnh hin tng b thm b mt qu sau khi thanh trng, lm ngui.
- Dch rt vo sn phm phi y thnh phn, hm lng cc cht:
ng, mui, axit to mi v cho sn phm.
- Dch rt phi ngp nguyn liu cch ming l 3-5mm trnh tip
xc vi np l gy hin tng oxy ha n mn kim loi v to chn khng
khi thanh trng khng b phng hp.
* Chun b dch rt:
Cng vi qu trnh xp l ta phi chun b dch sau khi xp l xong
th ta tin hnh rt dch ngay.
Trong hp da chut dm gim th dch dm gim bao gm: ng,

Sau khi nh lng v m bo v thnh phn, nng , hm lng
cc cht ta tin hnh pha dch.
Cch pha: ta cho cc cht nh ng, mui v cht bo qun axit sorbic
vo ni nu dch sau cho nc vo ni theo t l nh bng trn. Sau khi
cho nc vo ni theo yu cu th ta m van hi ra cung cp hi cho
ni nu dch ng thi bt cnh khuy ha tan cc cht trong thnh phn
dch. Cung cp hi n khi dch si th dng bm bm dch sang cc thng
cha dch nhung lu trc khi cho vo thng dch phi c lc qua lp vi
lc loi b cn bn v thnh phn khng ha tan c.Sau mi cho axit
axeetic vo v khuy u v tin hnh rt dch ngay.
* Phng php rt dich: cng ty rt dch bng h thng my t ng.
Sau khi dch c nu si tin hnh cho axit v tip tc nu nc
bay hi dn nhit kh cn thit. Dch un si c a ln b cha c
a qua cc ng ng xung h thng vi vt v tin hnh rt dch. Sau khi
da c xp vo l, qua khu kim tra nh lng v kim tra cm quan
c xp ln bn rt dch. Rt ln lt t l ny sang l khc khi ht l th
thi. Sau khi rt dch xong phi chuyn sang khu ghp np ngay.

Cch tin hnh: Np c ngm trong nc 60 - 70 oC trong 3 - 5

L sau khi c xp y da v rt dch cn c ghp np ngay v

Thanh trng l khu quan trng nht trong tt c cc qu trnh sn xut
hp ni chung v hp da chut dm gim ni ring v n nh hng
trc tip ti cht lng sn phm v ca tr cm quan ca sn phm.
Mc ch ca qu trnh ny l:
- lm chn sn phm, lm cho da mm hn v d ngm dch.
- Tiu dit hoc c ch hot ng cuarvi sinh vt trong sn phm nh vi
khun E.coli, Barcellus m bo cht lng cho sn phm.
- c ch , nh ch hot ng ca vi sinh vt c trong thc phm, gim
c bin i cht lng ca thc phm trong thi gian bo qun.
- Ko di thi gian bo qun.
- Tng gi tr dinh dng, tng tiu ha ca sn phm lm ra, lm
tng cht lng sn phm, tng cht lng cm quan.
Yu cu ca qu trnh thanh trng:
- Khi thanh trng cn phi thc hin nghim ngt ng theo quy nh
cng thc thanh trng v nhit , thi gian nng nhit, gi nhit i vi sn
phm v cng on ny quyt nh n cht lng cun phm.
- St hp sn phm khi thanh trng phi ngp nc.
- Da sau khi thanh trng khng c mm nhn, gin yu.
- L sau khi thanh trng khng b dp v, bt np, phng hp, mu sc
sn phm khng b bin mu.
- Thanh trng ng cng thc thanh trng cho tng l.
+ L 750ml: nhit thanh trng 870 C trong 30 pht.
+ L 550ml: Nhit thanh trng l 870 c trong 28 pht.

Phng php thanh trng:


Cng ty s dng phng php thanh trng th cng: L sau khi ghp
np c xp vo cc st st, xp theo hng. Mi hng c lt lp vi trnh
lm xy xt np l khi vn chuyn. Trc khi thanh trng cn v sinh sch s
ni thanh trng sau tin hnh cp nc v gia nhit.
Thanh trng tin hnh theo 2 giai on: tin hnh trong 20 pht
Giai on 1: Gi nhit
Ta m van gi nhit ca ni thanh trng t t 75-80 0C. Khi gn ht
10 pht ca gia on u ta tip tc cp nhit cho ni tng ln 90-920C.
Giai on 2: khi n pht th 6, th 7 ca giai on 2, nhit trong
ni t c 90- 920C ta ngng cp nhit, v gi sn phm nhit y
n ht thi gian ngm. Sau a sn phm ra b lm mt c nhit 55600C.
I.1.6.8 Lm ngui, bo n
Sn phm sau khi c thanh trng c lm ngui ngay trong b lm
ngui, n khi nhit sn phm t khong 40- 50 0 C th cu ln xe chuyn
dng v a i bo n. Sau l c xp vo nh bo n. Sau 7 - 15 ngy
kim tra li, loi b nhng l b phng, chy, nt

Sau thi gian bo n hp trc khi xut kho phi kim tra v loi b
nhng l b hng, phng sau em dn nhn v ng thng.

din tch trng da chut trn ton th gii u tng , trong vi nm gn y
din tch tng trung bnh khong 3,7% /nm. Din tch nm 2004 so vi nm
1991 tng gp hn 2 ln, nm 2004 din tch da chut l 2427,436 nghn
ha trong khi nm 1991 ch gieo trng c 1135,036 nghn ha, t trung bnh
600 - 630 tn/ha.

Da chut c trng khp trn th gii nhng ch yu 10 nc trong
tp trung cc nc Chu v Chu u. Trung Quc l nc sn xut da chut
ln nht vi sn lng tng t 13353,765 nghn tn (nm 1996) ln 25558 nghn
tn (nm 2004). Sn lng da chut sn xut ti Trung Quc chim gn 63%
tng sn lng ton th gii. Tip n l Th Nh K vi sn lng tng t 1300
nghn tn nm 1996 ln 1780 nghn tn nm 2004, tng sn lng da chut
Hoa K gim t 1110,76 nghn tn nm 1999 xung 969,4 nghn tn nm 2004.
Cn H Lan, Ty Ban Nha mc d din tch trng da c hn ch nhng c
trng trong nh knh nn c hiu qu kinh t cao. H Lan da chut l mt
trong 3 loi rau chnh trng trong nh knh c hiu kinh t cao sau c chua v t
ngt, din tch trng ch khong 700 - 800 ha nhng nng sut

2.2.2Tnh hnh sn xut v tiu th da chut ti Vit Nam


Vit Nam da chut c trng hu nh khp cc min ca t nc.
Tuy nhin, nhng vng sn xut ln tp trung thng gn cc khu th, khu
vc c nhiu nh my ch bin rau qu thuc vng ng bng sng Hng, chim
gn 40% din tch nh Thi Bnh, H Ty, Hng Yn, Bc Ninhv ng bng
sng Cu Long nh An Giang, Tr Vinh, cc tnh ng Nam B nh Ty
Ninh, Thnh ph H Ch Minh, Ty Nguyn nh Gia Lai v duyn hi Nam
Trung B nh Bnh nh, Ph Yn, Khnh Ha Din tch trng da chut ton
quc khong 20000 - 27000 ha. Din tch trng da chut bao t ca Vit Nam
tng t 148,42 nghn ha nm 2005 ln 448,42 nghn ha nm 2008. Khu vc sn
xut da chut ch yu l vng ng bng Sng Hng chim 23,28% v din tch
v 25,46% v sn lng (nm 2007).
Tim nng xut khu da chut ca nc ta rt ln, nhng do cng ngh,
thit b lc hu, khng ng b, cht lng sn phm thp, cha c sc mnh
cnh tranh trn th trng th gii. Nm 2004 sn lng da chut xut khu
(210000 tn) tng hn 3,5 ln so vi nm 1994 (60000 tn). Nu so snh vi
sn lng xut ra l 440.000 tn (nm 2004) th sn lng da chut xut khu
t khong 50%.

vo chit quang k o ly kt qu trung bnh ca cc mu.
3.2.2.3.Xc nh hm lng ng tng s theo phng php

Cho 10 mL dung d ch ng cn kho st v 10mL thuc th Fehling
vo bnh tam gic 250 mL. y bnh bng nt thy tinh v un trn bp c
li aming. un si khong 3 pht, kt ta xut hn trong bnh. Ly bnh
ra ngui.
Ra kt ta vi ln vi nc m un si cho n khi dch ra khng
cn phn ng kim trn giy qu. Qu trnh ra c tin hnh trn phu lc
chn khng vi giy lc xp G4 v ch l phn ln kt ta trn phu lc v
trong bnh lun c ph mt lp nc Cu2O khng b oxy ha bi oxy
khng kh.
Ha tan kt ta Cu2O vo bnh tam gic bng cch cho t t khong
5mL dung dch Fe2(SO4)3 trong H2SO4 v dng a thy tinh khuy tht
cn thn ha tan hon tan kt ta trn phu. Trng cn thn bnh v phu l
c 3-4 l n bng nc nng cho vo bnh tam gic 100mL.
Chun dung dch thu c bng KMnO4 1/30N cho n khi xut
hin mu hng nht bn trong 20-30 giy.
T lng KMnO4 1/30N dng chu n , tra bng 2.1 suy ra l
ng ng c trong m u phn tch. Song song lm th nghim i chng
bng cch thay dung dch ng bng nc ct.

c ha tan hon ton, lc ly dich trong.Ly 10ml dch lc trong cho vo
bnh tam gic 100ml.Thm vo 10 git tinh bt lc nh, dng I20.01N
chun cho n khi dung dch bt u xut hin mu xanh lam nht l c.

4.1. Kt qu kho st cht lng nguyn liu da chut bao t trc khi
sn xut
to ra mt sn phm th trc ht phi it khu nguyn liu.
Nguyn liu c a vo ch bin t bn thnh phm, ri thnh thnh
phm.Thnh phm s c lu thng, n tay ngi tiu dng v c s
dng. Nh vy phi tri qua cc qu trnh sn xut nng nghip to ra nguyn
liu, ch bin cng nghip to ra thnh phm v h thng thng nghip lam
nhim v lu thng phn phi.Ty vo mc ch v phm vi s dng khc
nhau m nguyn liu u vo c thuc tnh nh nhau , sau qu trnh ch bin

phm c v chua ngt hi ho, vi t l cc cht chn trong nc dm l
ng : 6%, mui : 3%, Axit axetic : 0.5%, Axit sorbic: 0.05% th ch cn
mt lng nht nh, nu qu nhiu hoc qu t cng s lm cho v sn phm
khng hi ho, cc cht nhiu cn lm tng nht lm gim cht lng cm
quan ca nc dm.
Hm lng cht rn ha tan tng l do trong qu trnh sn xut ngi ta
iu chnh hm lng cc cht nh ng,mui, axit axetic, nc sn
phm t c nh yu cu. ng thi hm lng nc trong da chut
sn phm i ra ngoi dch dm cc cht trong dich dm ngm vo nguyn liu
theo c ch thm thu do s chnh lch p sut gi dch dm v nguyn liu
da chut.

Qua phn tch hm lng vitamin C chng ti thy hm lng vitamin


C qua cc thi im trong cng mt ngy bin i l khng nhiu.
Qua bng trn chng ti thy hm lng vitamin C thi im gia v v
ngy th 1 l cao nht : 4,26 (mg%)
Qua qu trnh ch bin hm lng vitamin C trong sn phm gim i nhiu
so vi nguyn liu ban u.
Kt qu trn c gii thch nh sau:
Da chut ti c hm lng vitamin C nhiu tuy nhin v tan c
trong nc, d b oxy ho v ph hu bi nhit cao nn thng b tn tht
nhiu trong ch bin v bo qun. Bnh thng vitamin C vn c th xy ra s

oxy ho trc tip vitamin C bi oxy khng kh di s xc tc ca enzyme


ascorbatoxydaza. Enzyme ny xc tc s oxy ho trc tip vitamin C bng
oxy l mt loi enzyme cha Cu, c pH thch hp l 4.6 6.6. nh sng cng
tham d vo vic xc tin s oxy ho ca vitamin C. Vitamin C kh n nh
trong mi trng acid, dung dch ng hoc mui khng c oxy.
Chnh v vy, trong qu trnh ch bin hm lng ca n b tn tht
tng i ln. Mt phn nh b tn tht trong khi ra v phn ln l tn tht
do b ph hu bi nhit trong cng on rt dch v thanh trng. Trong
thi gian bo qun, hm lng vitamin C trong da chut gim l do hin
tng chnh lch nng cht tan gia da chut v nc dm m nguyn
nhn chnh khng phi l do vitamin C b tn tht i. Theo thi gian bo qun
hm lng vitamin C trong da, trong nguyn liu ph v gia v s khuch tn
dn ra nc dm, lm cho hm lng ca n trong da chut gim i cn
trong nc dm th tng ln. Nhng ngy u ca qu trnh bo qun do mc
chnh lch nng cn kh ln nn hm lng vitamin C da chut gim
nhanh hn, cng v sau s khuch tn din ra cng chm v s ngng li khi
hm lng vitamin C gia nc dm v da chut cn bng nhau.
T kt qu nguyn cu nhn thy: nng cao hn na gi tr dinh
dng ca sn phm c th l hm lng vitamin C trong sn phm, cn
nguyn cu thm cc bin php c th gim s tn tht ca n trong qu trnh
ch bin hoc cng c th tng hm lng viatmin C trong sn phm bng
cch b sung cc nguyn liu ph, gia v hoc ph gia khc.
4. 5.Kt qu nh gi cm quan

Do thi gian thc tp c hn nn ti cha nh gi c cht lng
ca cc ging da chut bao t khc nhau nh hng n cht lng sn
phm da chut bao t dm gim mi cng ty c cng thc sn xut khc
nhau.
T hn ch ca ti chng ti ngh:
- Tip tc nh gi nh hng cht lng ca nhiu ging da chut
bao t ti sn phm da chut bao t dm gim nhiu cng ty, t rt ra
kt lun chung cho tt c cc ging.
- Tip tc nghin cu tm ra cch ch bin sn phm da chut bao t
dm gim l tt nht.
