20 Baking, Biscuits
Oranges are packed with vitamins C and B, which makes them fantastic for fighting infection.
They also help prevent heart disease and high blood pressure. Lemons are powerful immune
boosters, are good for the digestive system and stave off mouth ulcers and gum disease.

100g (4oz) plain flour
Pinch of salt
75g (3oz) powdered almonds
Cup of light, soft brown sugar
175g (6oz) golden syrup
100g (4oz) unsalted butter
2 tablespoons lemon juice
Grated zest of 2 oranges

Pre-heat the oven to 350F/180C/ gas 4. In a bowl, combine the flour with the
salt and almonds. In a saucepan, over a medium heat, combine the sugar, syrup
and unsalted butter, stirring until the mixture has blended together and has
come to the boil. Remove from heat and fold in the flour mix along with the
lemon juice and orange zest.
Prepare a baking tray and drop teaspoonfuls of the batter on to the tray about
7.5cm (3in) apart. Cook in the oven for approximately 12 minutes or until the
edges of the biscuits are lightly browned. Allow the biscuits to cool for a few
minutes on the tray, then transfer to a wire rack to cool completely. Serve with
a fruit syllabub
