CARROT SALAD
Ingredients
2 tbs. olive oil
2 tbs. rice or cider vinegar
cup orange juice
1 tbs. fresh thyme minced
tsp. kosher salt
4 cups grated carrots
1 cup raisins
1 pear, diced
1 apple, diced
1. In large bowl, whisk oil, vinegar, orange juice, thyme and salt.
2. Add carrots, raisins, pear and apple. Stir.
3. Chill 1 hour before serving.
Serves 4
