Herb and Tortellini Salad

Ingredients
350 g pkg cheese filled tortellini
3 tbsp low-fat mayonnaise
1/4 cup finely chopped sun-dried tomatoes
2 tbsp chopped parsley
1 tbsp red-wine vinegar
1/2 tsp Dijon
1/4 tsp each dried basil, oregano, and sugar
Pretty cheese-filled tortellini pasta tossed in a delicious creamy-herb dressing this dish
tastes as good as it looks.
Instructions
Cook 350-g pkg of cheese-filled tortellini according to package directions, omitting salt.
Drain and rinse with cold water. Stir 3 tbsp low-fat mayonnaise with 1/4 cup finely
chopped sun-dried tomatoes, 2 tbsp chopped parsley, 1 tbsp red-wine vinegar, 1/2 tsp
Dijon and 1/4 tsp each dried basil, oregano and sugar in a large bowl. Toss tortellini with
dressing until well coated.
