Cajun Gumbo

Ingredients:
1 lb fresh shrimp 1 lb crab meat (whole boiled, cleaned crab or crab claws
can be substituted) 1 lb fresh okra (frozen cut okra can be used) 1 medium
onion 1 medium bell pepper 2 stalks of celery
202 cloves garlic 1 tsp Caun !easoning 1 tsp "ile (if available) # medium
tomatoes, peeled and chopped (a can of cooked tomatoes can be
substituted) 1$ oz can tomato sauce !alt to taste # % olive oil & cups water
(more can be added if gumbo becomes too thick)
Instructions:
'eel shrimp( Cut okra into slices( Chop onion, bell pepper and celery coarsely(
!aut) onions, peppers and celery in oil in large pot (old cast iron pot is best)(
*hen onions start to become translucent, add okra( Cook until it loses its
sliminess then add shrimp( 'eel and chop garlic and add to pot( *hen shrimp
turn pink, add tomatoes, sauce, water and seasoning( +ring to boil and then
simmer about 20 minutes( ,dd crab( !immer - more minutes(
!erve over .u/y white rice in a bowl( %his thick rich soup is a winter favorite
in Caun country( %his is an adaptable meal0 oysters can be added when you
add the crab( !ome people also add sausage( , Caun host always o/ers
food, so if une1pected company comes, ust add water to stretch this gumbo(
